Dubai Chocolate Chia Pudding
Stir together the chia seeds, pistachio milk, cardamom, maple syrup, and kataifi in a glass bowl. Put a lid on the bowl and place it in the refrigerator for at least 4 hours or refrigerate overnight.
However, if you are short on time, then add the chia seeds, pistachio milk, cardamom, and maple syrup to a blender and blend for about 10 to 20 seconds. Then, using a spatula, stir (not blend) in the toasted kataifi.
Toasted Kataifi (make when chia pudding is ready)
Add the butter to a pan set over a stovetop set to medium heat. Let the butter melt.
When butter is melted add in the kataifi and let it turn golden, stirring with a spatula to avoid the kataifi from burning.
When golden, remove from the oven and set aside for it to cool.
Kataifi Pistachio Bites (can make ahead)
Mix together the pistachio butter and the toasted katafi.
Adjust the quantities of each so you can form the mixture into small bites/balls. These can be stored in a airtight container until the chia pudding is ready.
Use some of the melted chocolate to coat some of these bites. Drop some of the pistachio kataifi bites into the melted chocolate and toss them around so they are coated in it.
Chocolate Layer (make when chia pudding is ready)
Assembly
Divide the chia pudding between two serving dishes.
Spoon or pour some of the melted chocolate over the pistachio kataifi chia pudding.
Then place the chocolate-covered pistachio kataifi bites as well as the uncovered pistachio kataifi bites on top of the chocolate layer.
Dig right in!Or, you can place the Duba Chocolate Chia Puddings in the fridge for about 15 minutes for the chocolate layer to harden a bit before digging in. Enjoy!
