Chia pudding gets some Dubai chocolate bling in this delicious Dubai Chocolate Chia Pudding! In this recipe, pistachio kataifi chia seed pudding is topped with pistachio kataifi bites and chocolate, for a decadent, nutrient-heavy treat that can be enjoyed for breakfast, dessert, or snack.

Ingredients

Dubai Chocolate Chia Pudding

  • 1/4 cup chia seeds
  • 1 cup pistachio milk
  • 2 tbsp zero-calorie sweetener or sugar
  • 1/4 tsp cardamom
  • 2 tbsp toasted katafi

  • 1/3 cup chocolate
  • 1 tsp coconut oil

Instructions

Dubai Chocolate Chia Pudding

  • Stir together the chia seeds, pistachio milk, cardamom, maple syrup, and kataifi in a glass bowl. Put a lid on the bowl and place it in the refrigerator for at least 4 hours or refrigerate overnight.
  • However, if you are short on time, then add the chia seeds, pistachio milk, cardamom, and maple syrup to a blender and blend for about 10 to 20 seconds. Then, using a spatula, stir (not blend) in the toasted kataifi.

Toasted Kataifi (make when chia pudding is ready)

  • Add the butter to a pan set over a stovetop set to medium heat. Let the butter melt.
  • When butter is melted add in the kataifi and let it turn golden, stirring with a spatula to avoid the kataifi from burning.
  • When golden, remove from the oven and set aside for it to cool.

Kataifi Pistachio Bites (can make ahead)

  • Mix together the pistachio butter and the toasted katafi.
  • Adjust the quantities of each so you can form the mixture into small bites/balls. These can be stored in a airtight container until the chia pudding is ready.

  • Use some of the melted chocolate to coat some of these bites. Drop some of the pistachio kataifi bites into the melted chocolate and toss them around so they are coated in it.

Chocolate Layer (make when chia pudding is ready)

  • Place the chocolate and coconut oil together in a microwave-safe bowl and melt it in the microwave at 30 second intervals. Usually in 30-50 seconds, the chocolate is melted. Stir well to get rid of any clumps.

Assembly

  • Divide the chia pudding between two serving dishes.
  • Spoon or pour some of the melted chocolate over the pistachio kataifi chia pudding.
  • Then place the chocolate-covered pistachio kataifi bites as well as the uncovered pistachio kataifi bites on top of the chocolate layer.
  • Dig right in!
    Or, you can place the Duba Chocolate Chia Puddings in the fridge for about 15 minutes for the chocolate layer to harden a bit before digging in.
