Made with 7 ingredients that include canned salmon, some potatoes I found in the back of my pantry, and spices that are pantry-staples, these tasty & easy Air Fryer Salmon Croquettes were the highlight of our weekend!
- 2 cans salmon I use Wild Selections salmon
- 2 small to medium red potatoes - boiled and peeled
- 1/2 red onion
- 3 cloves garlic
- 1/2 inch piece of ginger
- 1 tsp coriander
- 1 tsp smoked paprika
- 1/4 cup almond meal or breadcrumbs
- 1/4 tsp salt and pepper
- 2 tsp fresh parsley or 1 tsp dried parsley
- Cooking oil spray

Add the boiled and peeled potatoes to a bowl. And, using a fork, roughly mash them up.
Then, open the cans of salmon and drain thoroughly. Then add the salmon to the bowl with the potatoes.
Peel and chop the onion, garlic, and ginger well. Then add these to the bowl as well.
Also add in the coriander, smoked paprika, salt, pepper, parsley and almond meal and mix well.
Then, make sure your hands are washed and clean and gather up about 2 tbsp of the salmon croquette mix. Roll it into a ball. Repeat with the rest of mix. You should have roughly 24-25 croquettes.
Spay an air fryer tray with cooking oil. Then place salmon croquettes on air fryer tray and spray them as well.
Preheat air fryer to 375 degrees for 2 minutes. Then, place tray with salmon croquettes in the air fryer and let air fry for 18-20 minutes.
