Carrot Cake Cookies
Filled with bananas and carrots, these refined sugar-free, gluten-free, Carrot Cake Breakfast Cookies make eating your veggies for breakfast F.U.N. and super tasty! And, warming spices like cinnamon, cloves, ginger, cardamom, and nutmeg will perfume your house as these bake!
From food choices to financial decisions, my friend Neil often talks about how he and his wife Lynne apply the 80/20 rule to all aspects of their lives. While I don’t often mention it on here, I am a huge fan of the 80/20 rule. Charles Jaffe’s quote: “it’s not your salary that makes you rich, it’s your spending habits,” is my mantra! And, the reason why most times when something cosmetic needs to be done around my house, I roll up my sleeves (after edumacating myself at Youtube University) and try and figure it out myself.
This past weekend was one of those edumacate-myself-at-Youtube-University-and-roll-up-my-sleeves type of weekends! You see, this past Saturday I finally decided to tear out the old laminate wood floor in our large, rectangular, living room and replace it with laminate wood floors that matched the rest of the house. Seeing the last time I tackled a floor was about 4 years ago with a lot of help from a friend, I had no idea how things were going to turn out. After I had moved everything out of the room, I was trying to wedge the first floor board out when my daughter came in and said, “mom, I watch HGTV and you are going to have to share the demo-fun with me!” And…y’all… demolition work is indeed SO MUCH FUN! And – so much more easier and quicker than installation work! I guess that can be applied to other aspects of this life, eh?
My daughter didn’t only help me with the demo, instead, she chose to forgo doing her homework in favor of snapping and hitting floor boards into place. While I know DIY flooring isn’t for everyone, this was one project that brought us so much pride and muscle aches and joy – in ourselves and each other – almost 9 hours after we had started! And, I was so glad I had made these Carrot Cake Breakfast Cookies for us to enjoy as these were our fuel through those 9 grueling-muscle-aching-pride-and-joy-filled hours!

These Carrot Cake Breakfast Cookies are made with an overripe banana and a 1/4 cup of a zero calorie sweetener of your choice and no other added sugars! I used a Gluten free flour blend for this batch, though you could sub in regular all purpose flour or oat flour. But, the oat floor tends to make the cookies crack more. I also used coconut oil in these instead of butter – I have nothing against butter – but I just wanted to make these as healthy as possible as I knew my daughter would veto my suggestion of a coconut cream frosting for her share of these cookies and insist on a buttercream frosting! Sometimes as a parent, there comes a time when we’ve gotta let our kiddos think they have won the battle – right?!
Ingredients
- 1 overripe banana
- 1/2 cup finely grated carrots
- 1/4 cup almond butter
- 1 egg
- 1 cup gluten-free all purpose flour
- 1 tablespoon coconut oil
- 2 teaspoons baking powder
- 1/4 cup Splenda Naturals or sweetener of your choice
- 1 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon cardamom
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/4 cup pecans
Instructions
- Meanwhile, add banana to a bowl and mash it
- Then add in the carrots, almond butter, egg, flour, coconut oil, baking powder, sweetener, cinnamon, nutmeg, ginger, cardamom, pecans and cloves and stir well.
- Refrigerate dough for 30 minutes or so
- Pre-heat oven to 375 degrees
- Form dough into balls, flatten them slightly and bake at 375 for 13-15 minutes.
- Let cool
- Frost with whipped coconut cream or buttercream frosting.

I love carrot cake cookies! Your version looks very delicious too, thick cookies look very satisfying!
Wow these look amazing! Would love one with a cup of tea
You are one brave woman, doing your own flooring! Last time my OH and I discussed changing up our floors, we ended up veto-ing the whole idea altogether. Mind you, wallpaper is hard enough for us as non-DIYers.
Love the sneaky addition of veggies to make these more suitable for breakast, and the zero sugar. Great idea!
I just don’t have the patience for big overhaul DIYing ๐
Cooking for breakfast are always a win!
Thumbs up for you and your daughter!!! You two definitely deserve those awesome breakfast cookies.
I can only imagine how good your house must have smelled while these cookies were baking! I bet it smelled like Fall! I also want to eat that entire tray of cookies. But flooring, eh? So nice of lil Shashi to ‘forgo doing her homework’ to help you! (Tough choice there…) We redid our kitchen floor in Atlanta, and it turned out quite well…but I had a buddy helping who knew what he was doing. I would have been lost out there on my own! Maybe next time I need flooring work, I’ll bake a batch of cookies and invite lil Shashi to take a day away from the nearby college campus to come help! Haha!
These sound great, and congratulations on your DIY endeavours! There’s something really satisfying about doing it yourself, isn’t there.
These breakfast cookies look beautiful! I love the combination of spices and that frosting on top. Great photos!
I wish I had these for breakfast today, breakfast cookies are the BEST!

You definitely earned these pretty cookies, Shashi! I mean, wow, new flooring?! That’s seriously impressive stuff! Yay for a You Tube University edumacation! Seriously, I’m practically smelling all of those spices in these cookies right now, they sound so delicious. I need!
Yum!!! These look amazing Shashi! Nothing beats carrot cake for breakfast! Especially as cookies. Delicious!
Go you! I’m zero percent handy, so tearing up and installing new flooring sounds terrifying (though, maybe with some YouTube help it wouldn’t be sooooo bad). One thing I’m totally ok with? Breakfast cookies, always and forever.
I’m with you in the 80/20 rule when it comes to life! And ummm YOU GO GIRL! I can’t believe you replaced the floors yourself! Seriously, I am bowing down at your DIY self! I would have done the demolition no problem, but I would have given up after that. ๐ Good thing you had these fabulous breakfast cookies to fuel your DIY flooring fire! Anytime I can have cookies for breakfast, I am game, so I am loooooving these!! I mean carrot cake cookies?! HECK YES! Love that you added ‘naners to these! And those warming spices just sound perfect! I need to bake me up a batch of these pronto! Cheers, lovely! xo

I’m a big fan of carrot cake so I am game for breakfast cookies. Love that there is no processed sugar in these because who really needs that much sugar first thing in the day.
So cute!!
Oh my….the swirl of frosting on top of these looks irresistible!
YOU ARE ALWAYS making food look so so so so so good!
Donald Trump needs you LOL!
Shashi, I’ve sent you an invitation for a fancy party I’m having soon. It doesn’t involve many people. Indeed, it’s going to be only our house, you, and a list of things need to be done/renovated:) Sure, I’ll provide some fancy food. And please bring these delicious carrot banana cookies with you. Pecans, cardamom, and under 100 calories? I’ll take 5…or 10 cause breakfast is an important part of all meals, right?:)
“after edumacating myself at Youtube University” <– Shashi, THIS!!! My mom and my sister would totally agree with this and send you SO many high-fives! They love learning all the things from TY. Lol.
Yep, demo work is so much easier than installs. Lol. It's never quite as easy to build as it is to destroy–alright, let's dial it back before we get too philosophical here. Ha. Meanwhile, these cookies look amazing my friend. So soft, so moist and so perfectly delish for breakfast. Yoy know I can't resist an amazing cookie for breakfast. Plus that frosting is totally making me faint right now! Send some over? Hope you and your kiddo have an awesome weekend my dear. xoxo
Wow!! These look amazing and would make a great breakfast ๐ I also try to do things by myself, but usually have to resort to getting help ๐
