Pan-Roasted Radishes with Berbere (Easy 15-Minute Recipe)

Crunchy radishes are transformed into an almost potato-like consistency in this Pan-Roasted Radishes with Berbere dish. This smoky, savory side dish is ready in 20 minutes, uses one pan, and just five ingredients.

There were many times when I would bring home a bunch of radishes from a farmers market, use a couple in salads, and not know what to do with the rest. Well, one day I decided to pan-roast them just to see what would happen. And I haven’t stopped eating them this way!

Raw radishes are usually just a crunchy salad topping, known for their sharp, peppery flavors.

But roast them, and they become a warm, soft, comforting veggie — closer to a roasted potato or turnip than the radish you’re used to eating raw.  Spice them with berbere (an Ethiopian spice), and you have one heck of a tasty, low-carb side dish.

Ingredient Notes

  • Radishes: There are several radish varieties, but I used the commonly found pinkish red ones. I trimmed and quartered each of the entire bunch. The larger ones in the bunch, I cut a bit smaller. 
  • Onion: peeled and chopped. It doesn’t matter if your onion is red or yellow, as long as it is a fresh onion and not onion powder. I have also made this dish with some grated onion and ginger added to the onion.
  • Olive oil: or any oil you have on hand will work. Butter or ghee can also be used.
  • Berbere spice blend: Berbere is a warm, aromatic Ethiopian spice blend typically made from chile peppers, garlic, ginger, fenugreek, and warm spices like cardamom and cloves. It adds heat, smokiness, and depth to this radish recipe. You can find it at most spice shops, international grocery stores, or online. If you can’t find it, a mix of smoked paprika, a pinch of cayenne, and a little ground cardamom makes a solid substitute.
  • Salt and pepper: add enough to suit your preferences.
  • Fresh parsley: this can be omitted or substituted with fresh herbs like cilantro or thyme.

How to Make Pan-Roasted Radishes with Berbere

Step 1: Sauté the onion.
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes, stirring occasionally, until softened and just starting to turn golden.

Step 2: Add the radishes and spice.
Add the halved radishes to the skillet. Let them cook undisturbed for 4 minutes so the cut sides develop a good sear. Sprinkle the berbere on top.

Step 3: Flip and cook through.
Gently stir and flip the radishes, then continue cooking for another 4 to 6 minutes, until they’re fork-tender and slightly browned on the cut sides.

Step 4: Season and serve.
Remove the pan from the heat. Season with salt and pepper to taste, sprinkle with fresh parsley, toss to combine, and serve warm.

Recipe Tips for this Pan-Roasted Radishes with Berbere 

  • Cut radishes evenly. Halve smaller radishes and quarter larger ones so everything cooks at the same rate. As the radishes are sliced, they roast quickly.
  • Don’t overcrowd the pan. Give the radishes room to make contact with the hot surface — this is what creates those caramelized edges. If needed, cook in batches or use a larger skillet.
  • Adjust the heat. Start with 1 teaspoon of berbere and add more next time if you like it spicier — berbere blends vary in intensity by brand.

Do I need to peel radishes before roasting?

No peeling needed — radish skin is thin, tender, and edible. Just wash and trim off the root and stem ends.

How do I store leftover roasted radishes?

This recipe is best enjoyed hot or warm just after it is cooked. However, leftovers can also be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat to help re-crisp the edges.

Can I roast radishes in the oven instead?

Yes. Toss the radishes with oil and berbere, spread them on a baking sheet, and roast at 425°F for 20-25 minutes, flipping halfway through.

  • 1 tsp berbere
  • 1 lb radishes
  • 3 tbsp olive oil
  • 1 tbsp chopped fresh parsley
  • 1/2 medium onion
  • Salt and pepper to taste

Instructions

  • Peel and chop the onion.
  • Rinse radishes well, trim the ends off, and cut into quarters. Make sure all the pieces are roughly the same size so they cook evenly.
  • Add the olive oil to a large skillet set over medium heat.
  • Add the chopped onion and sauté for about 5 minutes, stirring occasionally, until softened and just starting to turn golden.
  • Add the halved radishes to the skillet and let them cook undisturbed for 4 minutes so the cut sides develop a good sear.
