Easy Carrot Chutney Recipe

Ingredients
- Carrots, boiled for 15 minutes and softened
- Olive oil
- Yellow onion
I used a yellow one as the color lets the orange of the carrots shine through. A red onion would muddy the color a bit. - Fresh ginger
You could also use minced ginger that is sold in the produce section of most grocery stores. - Sweetener
I used a zero-calorie sweetener as I was trying to keep this chutney refined sugar free as I was making this batch for my mom who is watching her sugar intake. - Apple cider vinegar
I usually use red wine vinegar in most chutney recipes. But, in this one, like the red onion, I have found that the red wine vinegar turns this more brown than orange. - Spices
I used a blend of smoked paprika, cinnamon, ground cardamom, and red chilli powder. - Salt and black pepper, to taste

How do we make this easy Carrot Chutney?
1. Boil the carrots
Peel the carrots and place them in a medium sized pan. Fill the pan with enough water to cover the carrots. Place this pan on a stove set to medium heat and let cover the carrots. Let the carrots cook for about 15 minutes. Uncover and test them with a fork to make sure they are softened. You can also cut the carrots into smaller pieces to speed up this step. Boiling sliced carrots would shave off about 5 minutes off the boiling time.
Drain and mash the carrots with a fork and set aside.
2. Sauté the aromatics
Peel and chop the onion and ginger. Then, heat the olive oil in a skillet over medium heat. Add the chopped yellow onion and fresh ginger and temper or saute them for approximately 8 minutes, stirring occasionally, until the onion becomes soft and lightly golden.
Cooking the onion slowly helps develop a sweeter, richer flavor that complements the carrots.
3. Cook the chutney
Add the boiled and mashed carrots, sweetener, apple cider vinegar, smoked paprika, cinnamon, cardamom, and red chili powder into the hot pan, and stir well. Then, place the lid on the pan and let these ingredients cook for about 5 minutes. This short cooking time allows the flavors to come together while keeping the recipe simple. Remove from the heat and stir well.
Season with salt and black pepper to taste. Taste and adjust as needed.

4. Optional Blend
Transfer the mixture to a bowl and if the consistency isn’t what you prefer, use an immersion blender to blend this until it is smooth. You can also add this to a small blender or food processor and blend until you reach your preferred consistency.
For a silky-smooth carrot chutney, blend thoroughly. If you prefer a more rustic texture, pulse it a little less.

Ingredient Substitutions
Sweetener
You can use a zero-calorie brown sugar, regular brown sugar, maple syrup, or honey. Each will give the chutney a slightly different flavor, so choose whichever you have available.
Chili powder
Use chili powder for a milder, more rounded heat or cayenne for a sharper kick. You can also skip these and add some chopped green chilies or red pepper flakes at the end. You can also reduce the amount if you prefer a mild chutney.
Apple cider vinegar
Apple cider vinegar provides the chutney’s signature tang. If you substitute another vinegar, choose one with a relatively mild flavor so it doesn’t overpower the carrots. Also, do keep in mind that a red wine vinegar will change the color of the final product.
Fresh Ginger, Onion
I love the taste and flavor of 1 sautéed fresh onion and 3/4 inch ginger lend to this chutney. If you have a container of minced ginger garlic on hand, feel free to use that instead. While the resulting chutney might differ in taste, it will still be so tasty. Also, feel free to add in a garlic clove or two as I have done in my mango chutney recipe.

Recipe Tips
Cook the onion and ginger well. The 8-minute sauté helps soften the onion and ginger and brings out their flavors.
Blend while the mixture is warm, but use caution. If using a traditional blender, don’t seal a container filled with very hot ingredients completely, as steam can build pressure. Follow your blender manufacturer’s instructions for blending hot foods. This is one of the reasons I use an immersion blender.
Taste before serving. Depending on the carrots and sweetener you use, you may want a little more salt, vinegar, sweetness, or chili.
Adjust the texture. Add a small amount of water or a teaspoon oil if you want a thinner sauce-like consistency for this chutney.

Yes. In fact, making the chutney ahead can give the flavours more time to blend together and bloom. Allow it to cool after blending, then transfer it to a clean, airtight container and store in the refrigerator for up to 3 weeks.

Can I make this carrot chutney without a blender?
Yes. You can mash the cooked ingredients with a potato masher or use a manual grinder jar. The texture will be more rustic than a fully blended chutney. However, if you like a chunky chutney, then skip the blending and grinding.
Can I use maple syrup instead of brown sugar?
Absolutely. Maple syrup works well as an alternative sweetener and adds its own mild maple flavor.
