Easy Vegan Creamy Curry Pasta

I don’t talk about this often on this blog of mine, but, during my late teen years, I battled anorexia nervosa. Those were years I’m not proud of. Those were years that were consumed with deceiving my parents as to what I ate – while I plotted how to eliminate 4 food groups out of my diet and exist on fruit alone. As my weight dropped, so did my grades and energy levels.

I am in my forties now, and with time and help, I did make a slow, hard recovery.

I am so grateful to be able to say that I have lived and learned….

These days, I feel best when I manage to incorporate a variety of vegetables and legumes, fruits, nuts, and lean meats into my diet. These days, I can truly enjoy a plate of pasta – occasionally.

Modern Table Pasta Protein Packed

Or should I say, I used to enjoy a plate of pasta occasionally – until I ran into Modern Table® Gluten-free, Complete Plant-Protein Pastas! Modern Table® pastas are delicious and help me fuel and feed my body.

Making Creamy Curry Pasta - a Vegan Recipe

I like to enjoy my pasta with a hefty dose of veggies and beans (like in today’s Creamy Curry Pasta and this Pumpkin Pasta) instead of heavy creams and rich sauces. So, it’s a bonus when the pasta I’m using is not only made with lentils, but it is considered a Complete Plant-Protein as well.

My inner nutrition-geek found out from Google University that a complete protein is one that contains 9 essential amino acids such as histidine, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan, and valine. These 9 essential amino acids are the building blocks our bodies need for lasting energy, muscle health and good digestion.

Well, Modern Table® Plant-Protein Pasta is vegan, Non-GMO Project Verified and Certified Gluten-Free and is made with 3 simple ingredients such as lentils, rice and peas. Modern Table® Plant-Protein Pasta has a low glycemic index and does not contain any binders or fillers.

Modern Eating is about finding a new way – a better way – to create new habits and sustain them. It means we need to look inside to see what really matters to us – whether it be whole body health, clean eating, or animal welfare – and make it a way of living. We created Modern Table® because we believe that the foods we love to eat can also be the foods we want to eat.

Modern Table® pasta can be found at these stores, in:
• Modern Table® Penne
• Modern Table® Rotini
• Modern Table® Elbows
• Modern Table® Spirals

Pasta with a Sri Lankan Spin

Now back to this Creamy Curry Pasta…

My daughter and I love curry, so, instead of a rich sauce, I figured I would put a spicy, curry-spin on pasta and make a fusion curry with veggies, chickpeas, coconut milk, spices and Modern Table® Elbows.
