January 1st, New Year’s Day, is a day set aside by us humans to mark the beginning of a new year. There is no natural or seasonal or religious event that marks this day. In fact, it could be a day like any other.

Buy yet, it is the one day that people from around the world, regardless of religion or race, gather together to celebrate one cause: the dawn of a new year.

As my daughter and I rang in the new year, we were ruminating on this fact. So many people; so many different times zones; so many different cultures, religions, and socio-economic backgrounds, all unite on one night to celebrate the hope a new year brings.

On a broader scale, we might have hopes of being better, loving more, giving more, hating less…
And, on a narrower scale, we might have hopes of working out more and maybe eating better….

Kevins Riced Cauliflower and other ingredients to make the one pan fried cauliflower rice chicken dinner.

And that latter point is where today’s post for a low carb/clean keto One Pan Fried Cauliflower Rice Chicken Dinner fits in.

This One Pan Fried Cauliflower Rice Chicken Dinner is packed full of anti-inflammatory and immune-building ingredients in addition to veggies and chicken. It is an easy and tasty dinner that you can prepare in 30 minutes. You can serve it with a few sides / toppings that make this an even more fun and wholesome meal.

What are the ingredients to make this low carb One Pan Fried Cauliflower Rice Chicken Dinner?

You only need 12 ingredients (not counting salt and pepper) to make this recipe, and they are:

  1. oil
  2. onion
  3. garlic
  4. fresh ginger
  5. Sprouts air chilled chicken breast
  6. celery
  7. frozen peas
  8. Kevin’s Riced Cauliflower
  9. coriander
  10. smoked paprika
  11. turmeric, and
  12. jalapenos

I also used some parsley and chili flakes to garnish this dish. And, I served this dish with sides of scrambled eggs and pan-roasted mushrooms.

Now, you can rice a head of cauliflower to make this recipe. However, ricing a cauliflower head can be time consuming. So, I tend to use pre-packaged riced cauliflower to make recipes like this one.

There was a time when the pre-packaged riced cauliflower I used was from the frozen section. But, on a recent trip to Sprouts, I came across Kevin’s Naturals Original Riced Cauliflower in the deli section. Kevin’s Naturals Original Riced Cauliflower does not need to be thawed before it can be used. Just open the pack up and sauté it in a pan on the stovetop or microwave it in a microwave-safe bowl. So easy and convenient.

One Pan Fried Cauliflower Rice Chicken Dinner

In this One Pan Fried Cauliflower Rice Chicken Dinner, riced cauliflower is pan fried with chicken, greens, fresh onions, garlic, & ginger, and a plethora of spices. Served with scrambled eggs and sauteed mushrooms, this is a nutritious and tasty dish you and your family are going to want to make and remake.

Ingredients

  • 2 tbsp oil
  • 1 onion
  • 3 cloves garlic
  • 1 inch approx. knob of fresh ginger
  • 1 Sprouts air chilled chicken breast 0.80lb
  • 4 stalks celery
  • 1 cup frozen peas
  • 1 pkg Kevin’s Riced Cauliflower
  • 2 tsp coriander
  • 2 tsp smoked paprika
  • ½ tsp turmeric
  • 2 jalapenos
  • Salt and pepper to taste
  • Parsley and chili flakes to garnish
  • OPTIONAL – 1 egg scrambled
  • OPTIONAL – 1 sml pkg of bella mushrooms

Instructions

  • Peel and chop the onion.
  • Add the oil to a large frying pan and add in the onion as well. Sauté onion for about five minutes, stirring occasionally.
  • While the onion is sauteing, peel and chop the garlic cloves and a piece of ginger.
  • Add the peeled and chopped garlic and ginger to the onion mix and sauté for Another 5 minutes.
  • While onion, ginger, garlic, are sauteing, chop up the chicken into bite-sized pieces. Move the onion, ginger, garlic to the sides of the pan and add in the chicken. Let sauté for about 5 minutes, then flip pieces over and sauté for another five minutes.
  • Rinse and chop the celery while the chicken is sauteing and add it to the pan with the chicken, garlic, ginger, and onion.
  • Also, add in the frozen peas and sauté for about 2-3 minutes or until peas are warm.
  • Rinse and chop jalapeno. If you don’t want this to be too spicy, then slice the jalapeno lengthwise and remove as much of the pit and seeds as you can, and only use the green flesh.
  • Then add in Kevin’s riced cauliflower, jalapeno, coriander, smoked paprika, and turmeric and sauté for about 4-5 minutes.
  • Remove pan from heat and season with salt and pepper.
  • Garnish with parsley and serve this One Pan Fried Cauliflower Rice Chicken Dinner warm.

OPTIONAL – If choosing to serve with eggs and mushrooms:

  • Scramble egg with 1 tsp oil and stir until cooked according to your desired consistency.
  • Mushrooms – sauté pack of mushrooms in 1 tbsp oil for about 20 minutes.
  • If so desired, serve this One Pan Fried Cauliflower Rice Chicken Dinner alongside
    some of these scrambled eggs and sauteed mushrooms.
