Packed with the unusual (yet delicious) combination of berbere and rosemary, this galette is also a texture lover’s dream. It consists of a flaky pastry, creamy white bean dip (or hummus), and deliciously spiced zucchini that’s garnished with fresh rosemary and chili flakes. 

Perfect as an appetizer, light lunch, or vegetarian dinner, this Air Fryer Zucchini Galette is ready in about 15 minutes.

And the best part is you don’t have to turn on your oven!

Pantry-staple ingredients to make zucchini galette

Ingredients

  • Zucchini
    I used fresh store-bought zucchini. If you have zucchini plants, you can use some fresh homegrown zucchini for this recipe. 
  • Spices
    I used a combination of Berbere seasoning, onion powder, and garlic powder. And some red pepper flakes as garnish. But the latter is totally optional.
  • Herbs
    I used some dried parsley as well as fresh rosemary (that seems to have taken over one of my raised beds)
  • Olive oil
    Or any mild oil for sautéing
  • Pie pastry
    I used a ready-made, large Wick’s pie crust topper. 
  • Bean dip or hummus
    I used some of the harissa bean dip in the Air Fryer Zucchini Galette pictured here. I have also made these galettes with hummus.
  • Egg
    For egg wash. You could also use milk to brush on the pastry. While milk won’t give it the glossy golden color an egg wash would, it will help the crust fold over and not fall apart.

Instructions

Step 1: Prep

Rinse and dry the zucchini, then slice it into bite-sized portions. Break the egg into a bowl, and using a fork, whisk it well.

Step 2: Cook the zucchini

Heat the oil in a skillet or pan over medium heat. Add the sliced zucchini, berbere seasoning, onion powder, garlic powder, and parsley to the skillet. Sauté for about 5 minutes, stirring with a spatula or wooden spoon, until the zucchini is tender. Season with some kosher salt and black pepper to taste.

Step 3: Prepare the galette

Preheat your air fryer to 375°F (190°C).
Place a sheet of parchment paper in the air fryer basket or air fryer tray. Lay the Wick’s pie pastry on top.
Spread the white bean dip or hummus evenly over the pastry, leaving a small border around the edges.
Top with the cooked zucchini mixture.
Fold the edges of the pastry slightly toward the center to create a rustic galette.
Brush the pastry edges with the whisked egg.

Make sure to trim any excess parchment paper that surrounds the folded galette. The reason for this is that you don’t want any parchment paper blowing around and coming in contact with the heating element in the air fryer, as this could cause a fire. 

Step 4: Air fry

Air fry at 375°F for 7 minutes, or until the pastry is golden brown and crisp.

Step 4: Garnish and serve

Allow the galette to cool for a few minutes before garnishing with fresh rosemary and a sprinkle of chili flakes. 
Before slicing, garnish the top with a scatter of fresh rosemary and a pinch of red chili flakes for a vibrant pop of color and a final kick of clean heat.

Serve warm as a light meal, appetizer, or alongside a fresh green salad.
