Beet Berry Waffles

The dictionary defines “adore” as: “to love or admire very much,” “to like or desire very much,” “to worship or honor as a deity,” and/or “to regard with loving admiration and devotion” – and these all fittingly describe my feelings towards beets!

Beet Berry Waffles

Yes, the humble, sometimes just plain gnarly, beetroot, holds a special place in my heart. And – as fate may have it, it just so happens to be good for my old ticker and other bits and pieces of me as well!

I understand that you might not entertain the same feelings towards beets as I do and for that I’m truly sorry. But maybe if you happened to try these Beet Berry Waffles or moist and delicious Beet Chocolate Oatmeal Cake or Beet Soup, you might change your mind?!

Shout® Trigger Triple-Acting Stain Remover

All that beet-adoration does have its side-effects, though. You see, I am a very messy cook – what I am working with always has a way of getting in my hair and on my clothes and well, beets make it known that they were on your clothes long after all the other evidence has been cleaned up. In fact, beets have been known to get me to give up many a favorite light colored t-shirt – well, at least that was before I stumbled upon Shout® Trigger Triple-Acting Stain Remover when I was out picking up some beets and berries at my neighborhood Walmart!

Beet Berry Waffles

Beet Berry Waffles

Yield: 4 waffles
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

These gluten free, cardamom and cinnamon laced waffles can be whipped up in the blender - and with a healthy dose of beets and berries, why they are perfect to get your day started!

Ingredients

  • 1 cup vanilla protein powder
  • 3/4 cup tapioca flour, you can use rice flour, but tapioca makes the waffles just a tad crispier
  • 2 eggs
  • 1/2 cup non dairy milk of your choice
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 3 tablespoons beet puree, I roasted a couple of beets for 45 minutes at 375 degrees, then peeled them and pureed them in a blender
  • 1/4 teaspoon cardamom
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • Handful of roughly chopped raspberries and blueberries
  • To garnish: melted chocolate, non-dairy whipped topping, raspberries, blueberries

Instructions

  1. Place the protein powder, tapioca flour, eggs, non-dairy milk, salt, olive oil, beet puree, cardamom, cinnamon, and vanilla in a blender and pulse till well incorporated.
  2. Using a spatula, gently fold in the berries.
  3. Pour 4-5 tablespoons or enough to make one waffle onto a heated waffle iron and let cook
  4. When waffles are all done, serve with non-dairy whipped topping, melted good quality chocolate and raspberries and blueberries.

Absolutely devine! I made it today for breakfast and it was wonderful. I used Blackwheat flour. Everyone loved it. Thanks for this gem of a recipe. I’ll definitely be making it again.

Mmm stacks on stacks on stacks a.k.a. the ONLY way waffles should be served - looks delish! In terms of being a messy cook, I try to be efficient about it i.e. clean up as I go along wherever possible. The absolute worst is to be left with a big fat mess to clean up in the end. Aside from waffles, other foods that I 'adore' include peanut butter, chocolate & Greek yogurt...and blueberries especially of late!

I'm somewhat of a messy cook. When it comes to dishes, I try to minimize for clean up purposes. But when it comes to actual messes, I just know I'm going to have to clean the countertop a few times! I feel like it comes with the job! Thank you so much for sharing such a delicious recipe!
