For the last five years of this little blog, I have shared a fun twist on enjoying black-eyed peas and greens. And, this year, I am continuing that tradition with these spicy fritters.

Here in the south, black-eyed peas and greens are a New Year staple. Even though I have lived here since my college years, I didn't really jump on that bandwagon for the longest time. That was, not until my mom moved here and decided to introduce black-eyed peas and greens into her New Year's menu.

Ever since, I have tried to incorporate black-eyed peas and greens into a fun snack, appetizer, or side dish.

And, today I have these slightly crispy, flavor-packed, delightfully comforting, Black-Eyed Pea Fritters with Greens.

Tips to make these Fritters

  • Fresh onion, ginger, and garlic add a bunch of flavor as well as nutrients to these fritters.
  • I used frozen black-eyed peas as well as frozen spinach in this recipe. You could use canned black-eyed peas too. Just make sure to drain them and rinse them well before using them in this recipe. The other option would be to use dry black-eyed peas. If using dry black-eyed peas, then cook them first before using them in this recipe.
  • I used boiled potatoes in these fritters. You could also use baked potatoes, but I have found that boiled potatoes are easier to mash and work best when I make fritters.

  • All the ingredients, minus the potatoes, were sautéed together. Sautéing them softened the onions, ginger, garlic, helped the spices mingle and mix, as well as thawed out the frozen black-eyed peas and frozen spinach.
  • These Black-Eyed Pea Fritters with Greens can be air fried or baked. They do tend t be a bit more crispy when air-fried than when baked. However, you could also pan sauté these until golden.

These 11-ingredient Black-Eyed Pea Fritters with Greens are a tasty, gluten-free, plant-based appetizer or snack. They are a fun spin on the Southern staple of black-eyed peas and greens for good luck in the new year.

Ingredients

  • 3 teaspoon coriander
  • 2 tap smoked paprika
  • ½ tap turmeric
  • 1 teaspoon Cayenne
  • 3 medium potatoes cooked (approx 3 cups)
  • 1 red onion
  • 3 garlic cloves
  • 1 inch chunk of fresh ginger
  • 1 cup frozen Black Eyed Peas
  • 1 cup frozen spinach
  • 2 tablespoon Parsley
  • salt and pepper to taste
  • 2 tablespoon cooking oil
  • cooking spray

Instructions

  • First off, boil the potatoes. When they are boiled, peel them and add them to a large bowl. Roughly mash them up and set them aside.
  • Then, peel the onion, ginger, and garlic. Then, chop them all up as small as you can.
  • Add the 2 tablespoon of cooking oil to a pan and add in the onion, ginger, and garlic. Saute for about 10 minutes over medium heat, stirring often.
  • Then, add in the frozen spinach and frozen black-eyed peas and stir well.
  • Then add in the cayenne, coriander, smoked paprika, and turmeric and stir until all spices are incorporated well.
  • Remove the pan from heat and add the mixture into the cooked potatoes and mix well.
  • When the mixture is cool enough to handle, grab handfuls of mixture up. Shape into patties and place patties in an airfryer or a silpat lined baking tray.
  • If Airfrying:
    Preheat air-fryer to 425 degrees, then place formed fritters on air-fryer tray and air-fry for 10 minutes. Open the air fryer, flip over the fritters, and air fry another 10 minutes.
  • If Baking:
    Preheat oven to 400 degrees, place the formed fritters onto a Silpat-lined baking tray and bake for 10 minutes. Remove pan from oven, flip fritters over and bake for another 15 minutes. Let fritters cool completely before enjoying.
