How To Make Golden Milk Chia Pudding
- Combine: In a blender or a large glass jar, add your almond milk, chia seeds, maple syrup, and all those beautiful spices.
- Blend: While I sometimes whisk my chia seed pudding ingredients, this time I chose to blend this mixture for 15–20 seconds. This results in an ultra-creamy, mousse-like texture that feels much more indulgent than standard chia pudding!

- Serve: This can be enjoyed immediately with a dollop of coconut whipped cream and a dusting of cinnamon.
- Chill (optional): If you prefer a chilled chia pudding, then place this in an airtight container. Cover it with a lid, and let this sit in the fridge for 2 hours or overnight.

- 1/4 cup chia seeds
- 1 cup almond milk
- 2 tbsp. maple syrup
- 1/2 tsp powdered turmeric
- 1/4 tsp cinnamon
- 1/4 tsp cardamom
- 1/8 tsp star anise

Instructions
- There are 2 ways to make this chia seed pudding.
- My favorite way involves a high speed blender.
- Add the almond milk, chia seeds, maple syrup, cinnamon, turmeric, white pepper, and cardamom to a blender. Using a grater, grate some star anise, measure out 1/8 tsp and add that to the blender too.
- Blend for 15 to 20 seconds.
- This can be served immediately with some whipped coconut topping, a dusting of cinnamon, and a drizzle of maple syrup.
- Or, it can be chilled for an hour or two and enjoyed with your favorite toppings.
- Another way to make this golden milk chia seed pudding is to mix all the ingredients together and place them in the fridge for 4 hours to thicken. Then Top and Enjoy.
