And when I do finally push the covers off and stumble down the stairs, my eyes are usually closed. That is until I get downstairs and smell the coffee!

Speaking of dessert, I whipped up this Easy Pumpkin Spice Cake with Maple Brown Sugar Icing to share with some friends and I’m sad to say someone even licked the crumbs off the serving plate!
I say sad because I wanted to lick the crumbs off the serving plate myself! ๐
This is one of my favorite spice cakes. It is quite an indulgent cake. But it is easy to whip up.
I picked up the parchment hack from a baking show to get cakes out of cake pans easily. Simply place long strips of parchment crisscrossing on baking tray so the strips hang over the edges.
Place cake batter on top of parchment strips and when cake is baked and cooled, you can use the parchment strips to gently lift the cake out of the pan.
I assembled the pumpkin spice layers and the maple brown sugar icing together and froze it before taking it over to enjoy with friends, and it didn’t fully thaw out before we dug into it.
But that didn’t seem to put a damper on everyone’s enthusiasm to taste this.
The pumpkin spice cake compliments the maple brown sugar icing so beautifully.
And, with warm mugs of coffee, this was such a treat after a delicious meal of Brussels Sprouts Kale Sauté, Spicy Cauliflower and Figs and Mango Chicken #NewellHomeRefresh.
Ingredients
- For the Pumpkin Spice Cake:
- 1/4 cup oil
- 1/4 cup unsalted butter
- 3/4 cup granulated sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 1/2 cups all purpose flour
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 3/4 cup milk
- 1 tsp pumpkin pie spice
- For the Maple Brown Sugar Icing:
- 1/2 cup butter
- 1/4 cup maple syrup
- 1/4 cup brown sugar
- 3 cups powdered sugar
- 1-2 tbsp coconut cream or heavy cream
- 1 tsp vanilla extract
Instructions
- For the Pumpkin Spice Cake:
Preheat oven to 350 degrees. - Prepare two 8 inch baking trays but oiling them and dusting them with flour. Then, cut 4 strips of parchment paper (long enough to drape over the sides of the baking tray) and place these, criss-cross on the bottom of each of the baking trays.
- Then, in a mixing bowl, mix together the oil, butter and sugar, using an electric mixer.
- Then add in the two eggs and beat well.
- In another bowl mix together the all purpose flour, salt, baking powder, pumpkin pie spice.
- Then alternate adding in the pumpkin spiced flour into the butter oil mixture with the milk and beat well.
- Pour the Pumpkin Spice Cake batter into the prepared baking trays and bake for 35 minutes at 350 degrees.
- Test to make sure cake is baked through by inserting a toothpick into the center. If it comes out clean, the cake is done. Set the cake aside until it is completely cool.
For the Maple Brown Sugar Icing:
In a small pan, add in the butter, maple syrup and brown sugar, over medium heat. - Stir well together for about 3-4 minutes until mixture comes to a boil. Then turn the stove off and let this cool completely.
- When cooled, use an electric mixture and gradually beat in the powdered sugar. Add in the vanilla and cream and beat well.
- Use this to frost the cake with – between the layers and over the top and sides and enjoy!
- *Cake can be placed in an airtight container or wrapped in plastic and frozen for upto a month (it hasn’t lasted longer than that in our home) and thawed at room temperature and enjoyed then too.
The cake sounds and looks super delicious with that maple icing!
