  2. Soy Milk: I used soy milk as it has a bit more protein in it than almond milk. However, unsweetened almond milk or cashew milk are good dairy-free options. Or, you could also use whole milk.
  3. Chia Seeds: I just got these white chia seeds, and I am also using them in oatmeal and overnight oats recipes for a boost in omega-3 fatty acids, antioxidants, and protein.
  4. Greek Yogurt: I used plain low-fat Greek yogurt for a tangy, thick texture, gut health, and more protein. Full-fat yogurt is also an option. Vanilla yogurt could be used instead, and the extra vanilla extract could be omitted. Coconut yogurt could also be substituted for a dairy-free chia seed pudding.
  5. Almond Extract: Just a touch adds such a pleasant flavor and aroma.
  6. Pure Vanilla Extract or vanilla bean paste: In my experience, it balances out the matcha.
  7. Sweetener: I used this monkfruit sweetener to keep this refined sugar-free. Maple syrup, agave syrup, coconut sugar, brown sugar, or honey are also good substitutions.
  8. Fresh Strawberries: These complement the matcha well. However, you could use your favorite fresh berries or fresh fruit instead.

This recipe is so simple!

  1. Combine
    In a medium bowl, whisk together the soy milk and the matcha powder first. Pro Tip: Sift your matcha through a small sieve to ensure there are no green clumps! Add in the chia seeds, Greek yogurt, almond extract, vanilla, and your sweetener of choice, and give the mixture a good stir.
  2. Chill
    Cover and place in the fridge for at least 2 hours, though overnight is best for the thickest consistency. After the first 30 minutes, give it one more stir to prevent the seeds from settling at the bottom. The chia seeds will absorb the liquid and thicken into a pudding-like texture.
  3. Enjoy
    Spoon the thickened pudding into glasses, mason jars, or containers, layering with fresh, juicy strawberry slices. These can also be topped with almonds or granola and a drizzle of almond butter.

Shashi's Expert Tip: If you want an even smoother, mousse-like texture, you can pulse the entire mixture (except the strawberries!) in a blender for 15 seconds before chilling.

After the first 5-10 minutes of chilling, give the mixture another stir. This prevents chia seeds from clumping and creates a smoother pudding.

Adjust sweetness
Start with 2.5 tablespoons of sweetener, then taste after chilling. Matcha can be slightly bitter, so you may prefer the full 3 tablespoons.
