    1. Hahaha! Sure thing Ben! Skillet and board are in the mail! But, this mail system we have in NYC and Atlanta isn’t great – goodies and utensils just disappear!

  1. Potatoes and eggs just go together, don’t they? Love these skins — loads of flavor, and they’re a great platform for whatever you want to stack on top of them! Really good stuff — thanks!

  2. Yes, loving the drippy egg! My boys would go crazy over this for breakfast, lunch or dinner. I have tried to look for pasteurized eggs before in HK and they are not available. As drippy eggs really make this dish hoping that Davidson’ eggs come to Asia soon. Shared and pinned, of course!

  3. Potatoes are one of the foodie loves of my life! I hate seeing them get such a bad rap all the time, so I love that you’re showing them some love 😀 And I can definitely speak to their calming qualities. My mom has a serious adoration for white potatoes, and sometimes she’ll eat a leeeeeeettle bit too many and end up passed out on the couch about 30 minutes later 😆

    1. Hahaha – Oh Amanda – that’s just too funny! But, I gotta say, sometimes I do the same! We’ve been making roasted potatoes with tons of spies and we have been eating a tad too many and well, the other day, I fell asleep during Grey Anatomy!

  4. Interesting! I had no idea that potatoes calmed your nerves. I clearly need to go out and buy a bag ASAP then. We’ve had some contractors doing work on our house, and let’s just say they are taking their sweet time. They were supposed to be gone 3 weeks ago, but our house is still in disarray. I clearly need some of these awesome potato skins for breakfast…like every single day! Awesome job, Shashi! 🙂

    1. Thanks so much David! Dude – sounds like your contractors might have been hitting the potatoes! Think it’s time to feed them some of your Black forest brownie pie AND LOADS AND LOADS of coffee – and they might turn into energizer bunnies! maybe? 😉

  5. I am OBSESSING over these! We have been eating potatoes and eggs for breakfast A LOT lately, and I adore Davidson’s Safest Choice Eggs. How have I never thought to eat my eggs ON my potatoes. You. Are. Brilliant! Pinned!

  6. Gorgeous potato skins Shashi. Love this idea. I’ll take three over easy please!

    1. Thanks so much Alice – I am lactose intolerant and cheddar doesn’t mess me up…something about lactose content being lower in aged cheeses or something…
