Easy Blender-Ready Blueberry Bars {Gluten Free • Refined Sugar Free}

Every now and then, my thoughts wander back to the fall of 2016… and I end up wondering, what the fizzles was I thinking then?
How the heck did I make it through TWO months without sugar???
Back then, I said a big NO to refined sugar as well as many forms of unrefined sugar. What the fizzles was I thinking, eh? Now, I did use a zero-calorie sweetener in my coffee from time to time and in treats like these Orange and Cardamom Bites, these peanut butter chip cookies, and these Ginger Cardamom Cookies.
But otherwise, for 2 months, I was pretty much sugar-free.
Would I do it again? I would have to say, seeing I’m older and ehem wiser… yes!

Bars like these blueberry bars and these jujube quinoa bars make it easy to tame my sweet tooth and make treats like these Sweet Potato Cupcakes a rare treat.

These Easy Blender-Ready Blueberry Bars you see here are very similar to these Chocolate Pretzel Bars. Only, I left out the pretzels and replaced the milk chocolate chips with dried blueberries.

My blender helped immensely in pulverizing the soaked dates as well as grinding the gluten-free rolled oats into oat flour. I also used some coconut oil, a smidge of salt, eggs, and vanilla extract to whip up these Blueberry Bars.
While these Easy Blender-Ready Blueberry Bars are refined sugar-free, dairy-free, and gluten-free, they taste pretty darn delicious!

I served these with some coffee and tea at a photography club meet, and I didn’t have any leftovers.

Ingredients
- 2 cups rolled oats
- 10 large mejdool dates (about 1 cup or, you can substitute 1 cup brown sugar)
- 1 cup coconut oil (melted or, you can use 1/2 cup butter and 1/2 cup coconut oil)
- 1/2 tsp salt
- 2 eggs
- 1 tsp vanilla
- 1/2 cup dried blueberries
- 1 tsp baking powder
Instructions
- Pre-heat oven to 350 degrees
- Prep a 8×8 or 9×9 inch baking tray but spraying with oil and then placing parchment into it
- Add the dates to a bowl of warm water and let soak a few minutes till soft (if water is hot it takes about 3-5 minutes, unless dates are super dry, then might take 10 minutes)
- Place the rolled outs in a blender and pulse till oats resemble oat flour
- Add the softened dates, coconut oil, eggs, salt, baking powder and vanilla to the blender and pulse till well incorporated.
- Add in the dried blueberries, using a spatula, mix till evenly distributed
- Pour mix into parchment lined baking tray and bake for 35 minutes.
- Let cool, cut into 9 squares and enjoy.

I remember when you went refined sugar free!! And I remember thinking, “bless her heart, she’s a better person than I am”. 😉 But, truthfully, looking at these bars, it seems easy to be refined sugar free!! These bars would make a great quick breakfast on a busy morning! They look delicious!
I think the macros are wrong. there is no way 1 of 9 bars has only 9g of fat when the recipe has an entire cup.
These blender bars sound delicious and I love that you used blueberries instead of chocolate chips! But then, I’m a fruit over chocolate person most any day of the week. I wish I had a local photography club to attend!
