Easy Flax Waffles (Flourless)

These waffles are on the healthier side. I made these with a base of Vanilla Protein Powder, baking powder, and ground flaxseed. I also added in a pour of a liquid vanilla protein shake, eggs, and olive oil.

If you’ve been hanging around Savory Spin for a while, you know I love a good “healthy-ish” hack. These waffles are a staple in my house because they are:

A Trip Down Memory Lane
When I was younger, and complained about some aspect of a city or country we were in, my dad would often say, “When in Rome, do as the Romans do.” As time passed, I learned to take his advice to heart—especially with my stomach!
I learned to enjoy Shawarma and the combination of milk and dates while in Abu Dhabi.
I reveled in kedgeree and Scottish eggs while in London
And, I ate my weight and then some of mangosteen, rambutan, apple cakes, and Woodapple jam while in Sri Lanka.
When in Rome…or Abu Dhabi…or London… or Sri Lanka, I enjoyed the native foods while I was there.
Then, when I left, I moved on.
I didn’t go looking for Woodapple jam in London, or Scottish Eggs in Abu Dhabi… after all, “when in Rome…” right?
But, a couple of weekends ago…
Rome came to a little store here in Decatur, Georgia!
I was perusing the aisles of a little store called Cherian’s, and, sitting there on the shelves with all the other exotic jams and jellies was…none other than WOODAPPLE JAM!!!
Now, y’all might be thinking, what’s all the fuss about? And, what the heck is a woodapple?
Well, I grew up eating woodapple jam on just about anything that would hold it – sometimes, that was just a spoon!
What the heck is Woodapple?
Now, woodapples are not related to apples in any way. Their “skin” is a hard shell that isn’t quite as appealing as the glossy exterior of an apple. In fact, some people think that woodapples not only look a little funky, but smell a whole lotta funky too!
But, I’ve always been partial to their aroma, which some people describe as a combo of blue cheese and warmed-up raisins.
Crack open their hard shell, and the soft, almost pudding-like fruit inside is simply heavenly! Some people describe the sour-sweet taste as being similar to a combo of tamarind and dates. Here is a video that shows you what a woodapple looks like.
Would You Like to Save This?
To me, woodapple is hard to describe – something so totally unique – I haven’t tasted anything quite like it since I moved away from Sri Lanka. I used to eat woodapple pulp mixed with milk and sugar. Woodapple is used to make jams and juices too.
When I came upon that woodapple jam, I had to bring home a jar, and I have been rationing it out. Only enjoying a gob of it every other weekend with one of my favorite waffles or pancakes.

Ingredients for Flourless Protein Waffles
To make these, you only need a few pantry staple ingredients:
- Protein Powder: I used a vanilla-flavored one, but you could use a plain one or your favorite flavor!
- Ground Flaxseed: This acts as our “flour” and adds a healthy dose of Omega-3s.
- Baking Powder: To give these waffles that essential waffle lift.
- Protein Shake: I used a pre-mixed one instead of milk for an extra boost.
- Eggs: To bind everything together.
- Olive Oil: Keeps the waffles moist without needing butter.
If your protein powder and shake do not have any salt, a pinch or 2 should be added in.
How to Make Protein Waffles with Flax
- Mix: Whisk all your ingredients in a medium bowl until smooth.
- Prep: Preheat your waffle iron. When it is preheated, spray your waffle maker with some cooking spray.
- Cook: Pour about 3-4 tablespoons of the waffle mix batter onto the iron. Close it and cook until golden brown and slightly crisp on the outside.
- Serve: Enjoy them warm, topped with some maple syrup, your favorite whipped topping, and some fresh berries. I love to add a tablespoon or 2 of woodapple jam on mine!
Recipe Tip:
These waffles are slightly softer than traditional flour-based waffles. If you like them extra crispy, pop them in the toaster for 30 seconds after they come out of the waffle iron!

Dubai Chocolate Chia Pudding. When I don’t want to shell out $19 on a bar of Dubai chocolate, I make some homemade pistachio butter, some homemade pistachio milk, and make this tasty, irresistible, and unique chia pudding.

Ingredients
- 1 cup Vanilla Protein Powder (I used Premier Protein)
- 1/2 cup ground flax
- 1.5 cups Vanilla Protein Shake (add more according to consistency)
- 2 eggs
- 3 tbsp. olive oil
Instructions
- Place all ingredients in a bowl, and mix well.
- Heat up a waffle iron and ladle 3-4 tablespoons of mixture on it – let cook.
- When done, enjoy with woodapple jam or syrup of your choice.

You’re right about food, Shashi. Having moved to Canada from Russia, I think I’ve never missed a specific food which is associated with the past life. There are too many things to try out (and only one stomach hah). Besides, nowdays we’ve got a unique opportunity to try some exotic (to us) food not travelling at all. Isn’t it great? But I won’t lie – I will probably be hesitant to try this woodapple jam due to its…peculiar flavor you’ve described. I’ve never heard of woodapple jam before but by the sounds of it, I would love it. I absolutely LOVE the funk of blue cheese so I think I may have to try and scoop out this woodapple jam thing. I totally know what you mean about rationing out something that you love. I’ve done that before, picking up a hot sauce, for example, that I may not be able to get where I live and only get on travels. It’s rationed out and when it’s gone, it’s such a sad moment. These waffles look so fluffy and delicious! Love the addition of protein powder in there for some extra somethin’ somethin’. Makes b fast a lot more substantial. And the flax in there too is a lovely fiber touch. Just thinking…..maybe make a breakfast sandwich out of these with a smear of woodapple jam, bacon and an egg? Now, I’m hungry!!
