Garlic Chili Chicken Cutlets / Croquettes

When I was a child, Sri Lankan cutlets were my jam. And it didn’t matter if they were stuffed with chicken, beef, mutton, fish or veggies – I was an equal opportunity eater.
By the way, Sri Lankan cutlets are breaded and fried orbs made with a filling that consists of a bunch of spices, potatoes and either chicken, beef, mutton, fish or veggies.
During my childhood in Sri Lanka, I tagged along with my parents to several buffet-style get-togethers with friends and family. At these buffet parties, cutlets (aka croquettes in the USA) were often the star and the first thing I reached for. If my mom didn’t catch me, I’d have been dining on a plate of cutlets, patties and other Sri Lankan short eats.
“Short eats” are a popular term in Sri Lanka that are used to describe a variety of snacks that range from breaded and fried meat and veggie stuffed cutlets, to vade (fritters made with lentils, beans, etc.), to rolls to breads to empanada-like patties. “Short eats” is also used around parts of India and South Asia to describe meat and veggie-filled pastries and snacks.
I might not live in Sri Lanka anymore and do not attend as many Sri Lankan buffet-style get-togethers, but Sri Lankan cutlets are still my jam.
Since I love them so much, I have adapted them so I can enjoy them more often. Very often I bake them instead of frying them. And then there are times when I air fry them – like I did with these Garlic Chili Chicken Cutlets / Croquettes.
This time around, I figured I’d go one step further in adapting these. As I was out of spices like coriander and cumin that are staples in the cutlets/croquettes I make, I figured I would add in some MAGGI® Garlic Chili Soy Sauce instead. Along with some turmeric, smoked paprika and chili flakes, the MAGGI Garlic Chili Soy Sauce enhanced the flavor of these Garlic Chili Chicken Cutlets / Croquettes beautifully.

Ingredients
- 2 Tbsp oil
- 1 onion
- 1 tsp. fresh grated ginger
- 1 lb ground chicken
- 1 tsp smoked paprika
- ¼ tsp turmeric
- 1 tsp red chili flakes optional
- 2 Tbsp MAGGI Garlic Chili Soy Sauce
- 2 boiled potatoes
- 3 Tbsp parsley
- 1 egg beaten
- 1 cup panko
Instructions
- Chop onion and add onion with oil to a pan. Let onion sauté, stirring often, for about 10 minutes.
- Then add in the grated ginger and mix.
- Then add in the chicken and MAGGI Garlic Chili Soy Sauce, turmeric, smoked paprika and chili flakes. Sauté until chicken is cooked through and extra liquid has been absorbed. Make
sure to stir frequently (approx.. 20+ minutes). - Remove chicken mix and let cool to room temp.
- Then, peel and roughly mash the boiled potatoes and add to chicken mix along with the parsley. Mix mixture well and form into balls.
- Dip balls into egg mixture with one hand and then panko mixture with the other hand, until all balls are coated.
- Set air fryer to 400 degrees Fahrenheit and place Garlic Chili Chicken Cutlets on a parchment lined baking tray. Air fry at 400 degrees F for 15-18 minutes.
- Enjoy Garlic Chili Chicken Cutlets dipped into more MAGGI Garlic Chili Soy Sauce and MAGGI Sweet Chili Sauce.
