Berry Frozen Treats in Honey Roasted Almond Cups

It has been an unusually warm week here in Georgia! So warm that we were wearing flip flops and shorts on Christmas day. All this warm weather has thrown a wrench in my plans. You see, this week I planned on working on my blog, my photography, and finishing Nagi’s book; but instead I’ve been galavanting around with my daughter.
We have been indulging in long runs at our favorite park and spontaneous road trips with the windows down. One such road trip took us to the town of Covington, Georgia – the filming location of Vampire Diaries. After strolling around graveyards, lakes and mansions where the show is being filmed, we sat down in the square by the courthouse and decided we needed a refreshing frozen treat and Scoops nearby only had dairy-full ones!
So, we headed home where there were some Honey Roasted Blue Diamond Almonds waiting on me. I wanted to make a quick, easy, cold treat with frozen berries and coconut milk and top it with ground up almonds for texture. But then my daughter had the idea to make a base of some sort with ground up almonds and top the base with a cold berry topping.
Well, her idea of a “base” lead me to make these 2-ingredient almond cups with ground up Honey Roasted Almonds and an egg. That’s all. I made the aromatic berry frozen treat by blending some frozen berries, almond extract, coconut milk, honey and cardamom together. We ended up enjoying these treats topped with some fresh berries and more ground up almonds.

Ingredients
- FOR THE HONEY ROASTED ALMOND CUPS:
- 1 cup ground up Honey Roasted Blue Diamond Almonds I ground mine up in a blender to a dust-like consistency
- 1 egg
- FOR THE BERRY FROZEN TREATS:
- 2 cups frozen berries of your choice I used mixed berries
- 8 tablespoons coconut milk or milk of your choice
- 1/4 teaspoon cardamom
- 1/4 teaspoon almond extract
- 2-3 tablespoons honey
Instructions
FOR THE HONEY ROASTED ALMOND CUPS:
- Preheat oven to 375 degrees
- Mix ground up Honey Roasted Blue Diamond Almonds with egg.
- Grease muffin pans or silicone cupcake liners and shape egg-almond mix along the contours/sides of the pan or silicone cupcake liners so mix lines the sides and bottom.
- Bake in a pre-heated oven for 15 mins
- Let cool – you might need to scoop out a little excess in the middle to make room for the frozen treat.
FOR THE BERRY FROZEN TREATS:
- Add frozen berries, coconut milk, cardamom, almond extract, and honey to a blender and blend till smooth
- Using a spoon, add frozen berry treat into the honey-roasted almond cups, top with fresh berries and any extra ground up almonds, and enjoy.
- *These treats can be frozen and thawed for about 30 minutes and enjoyed too.

A honey and egg crust?! That sounds divine, Shashi! And I love how simple it is! Also, I’d be more than happy to send you some of our colder weather if you need to get some work done 😉 We’ve actually had a pretty mild winter so far, but the cold hit us pretty hard this past week or so!

Our GA cousins have been up visiting and they are feeling right at home. Then the first snow of the season came last night and they left to drive home during the night. So timing is everything. HA. I didn’t realize that Vampire Diaries is being filmed in Covington. I never made it out there when we lived down there, but those pics are making me want to come back South ASAP. It’s been warm all year up here, too…but as I type this, it is currently sleeting/snowing/freezing raining…blech. I need some of these awesome almond cups to remind me of the warmer days. Lil Shashi is so creative. I might need to hire her away from you. Just sayin’. 🙂
David, I used to drive right through Covington when I went to visit friends in Macon but had no clue that VD was filmed there, then Lil Shashi became obsessed with the show and I stumbled on this tour of filming locations by accident and surprised Lil Shashi with it when we drove down there. Now everytime I watch the show, I see places we were at! Creepy and cool at the same time!
