Gluten Free Potato Bacon Pancakes
These delicious, gluten free Potato and Bacon Pancakes are a wonderful way to get your weekend dose of potatoes, bacon and eggs!
Being low carb and gluten free, bacon has always held a special place in my heart…and, in my heart it will probably always remain – literally! Most of the time, I use bacon as a topping – I sprinkle a little on Breakfast Potato Skins or on Breakfast Beet Pizza, so when I came across Chris @IFailedFran’s “Bacon Explosion“ I could only scroll in wonderment! It was weaved bacon with more bacon inside. I have to admit – I’d never seen so much bacon in one mouthful before. This was clearly a tangible and edible Pindaric Ode to bacon!
If I were to think back to my middle school poetry class, what I have today isn’t quite a Pindaric ode, but more a Horatian one.
You see, these pancakes have bacon in them – but, there is just a tad bit of it – some (my daughter) might say I should have added more – but, seeing “balance” is the word of the month round this place I figured 4 crumbled up pieces of bacon were enough. She talked me into topping these pancakes with more bacon and I told her if she had some veggie and pickled beet saute for dinner, we had a deal!
These pancakes are a marriage of potatoes and bacon and eggs. Instead of having them separately for breakfast – you can join them together with some coconut milk and voila – deliciousness! Now, as usual, these pancakes have no added flour in them – in any form. Just smooshed up potatoes, coconut milk, eggs, chives, bacon and a pinch of salt. As these didn’t have any flour in them – they did take almost 5-6 minutes on each side to cook.

Here’s hoping y’all have a wonderful weekend and get to enjoy some potatoes, eggs and bacon – in pancake form – sometime during it!

Ingredients
- 6 small yellow potatoes cooked -boiled/microwaved- and peeled
- 1 1/2 cup full fat coconut milk
- 2 eggs
- 2 teaspoons chives chopped
- 4 pieces cooked bacon + 2 pieces cooked bacon for crumbling
- 3/4 teaspoon salt
Instructions
- Using a food processor or a ton of elbow grease, mix the potatoes and coconut milk togther
- Add in the 2 eggs and mix till eggs are well incorporated
- Add in the chives and bacon and salt and mi
- Meanwhile, grease a pan and let it warm up on the stove with the temperature set a little below the medium heat mark
- Ladle 2-3 spoonfuls of potato/egg/bacon mix onto hot pan nd let cook for 5-6 minutes
- Flip and let cook 4-5 minutes
- * Now all stoves are different, so just make sure your flame isn't high enough to burn these and not low enough to not cook these.
Wow! What an innovative recipe, Shashi. I love potatoes in any form, and these pancakes look heavenly. Happy weekend my friend. 🙂
Thanks Anu – if you ask me, your beet crackers were pretty darn innovative! 🙂 Happy weekend to you too!
Two of my favourite ingredients = winning recipe! I have bookmarked this for later, although I’m definitely going to have to use the “ton of elbow grease” method, as there is no room for a food processor in my gypsy life!
Thanks Tara! “Ton of elbow grease” is how I did it too for the longest time – it can actually be kinda fun when you have something bugging you! 🙂
anything with bacon in it is a winner for me!
I like how you think Tandy!
I can’t believe these are made without any flours or grains! They look absolutely perfect!
Thanks so much Sarah 🙂
Okay, these look incredible. Gluten free?! And bacon?? I am definitely in!
I think there’s some sort of rule – if eggs and potatoes are involved – bacon has to be there too – right? 🙂
Thanks Ashley!
That is one hearty meal any time of the day. Breakfast, lunch or dinner. I am certain it would be a hit with the boys as bacon, is its own food group according to teenagers. Sharing!
Hahaha! Bobbie – your boys and my girl think A LOT alike! Every trip to the grocery store my daughter grabs bacon and puts it in the cart and I take it out and place it on the shelf 6 out of 10 times!
These pancakes look incredible, Shashi! Love that you made them with potatoes! Such a great idea to add bacon too 🙂
Thanks so much Kelly!
The phrase that totally got me was that it was a marriage or potato, bacona and eggs. What is not to love about this trio? 😀
Hahaha! Lorraine – that’s what I was thinking…
YUM!!! Way to knock it out of the park on this one… pinning, sharing, and yes, making ASAP!
Aww shucks – such a sweet compliment – thanks so much Elizabeth!
What!!! Making pancakes with potatoes?!?! Be still my pounding heart. I seriously love that you did this, and while I’ve never been a huge fan of bacon, I’d be MORE than happy to eat these with maple syrup and almond butter. Does that sound crazy? Naaaaah
Dang lady – your comment gave me food for thought (though food is always in my thoughts) I think you might be onto something with potato pancakes and maple syrup and AB! My daughter has been bugging me to make these again – I might have to try your suggestion next!
WOW, these look incredible! Potato pancakes + bacon = major comfort food! Pinning!
Comforting indeed! Thanks so much Marcie!
Doing the happy dance right now!! OMG – potato pancakes? These are GOLD!!! Pinning sharing!
My daughter did the happy dance too – when she tasted these 🙂
Thanks so much Nagi!
Oh heck yeah to potato pancakes! They remind me of my childhood and my Polish mother. Thanks for the lovely memory!
Awww – Thanks so much Pamela!
Duuuuude these look Epic with a capital “E” I mean, potatoes and bacon is hard to beat especially in pancake form. Great job my friend!
“Duuuuude” – last time I checked, I was a dudette!!!
Thanks my friend 🙂
I love potato pancakes, but have never added bacon before. Genius! These look like they would be a winner in my house for sure!
Paula Deen said butter makes everything better – but I think bacon does 🙂 Thanks so much Kaylee!
What a fabulous idea as always. The potatoes with the bacon sounds so good. My little one would say the same thing, more bacon. He is the only one who has bacon at home and just love it.
This looks amazing.
Hope you are doing well. I apologize, I haven’t been able to visit quite often in the last few weeks, catching up on your lovely posts.
xoxo
Oh Asha – no need to apologize – I know all to well how crazy life can get – thanks so much for your sweet words.
