Spinach Banana Pancakes
Start your morning with a hefty dose of these greens and protein-packed, Spinach Banana Pancakes! They are absolutely delicious with a cup of coffee or tea.

These spinach and banana-filled, Spinach Banana Pancakes are thin and fluffy. They are the perfect breakfast to linger over on a Saturday morning. I could go on about how delicious these are, but I would so love for you to make them and find out for yourself.
What are the ingredients needed to make these Spinach Banana Pancakes?
You will need the following 7 ingredients:
- 1 cup Isopure Protein Powder
- 1/2 cup brown rice flour
- 2 teaspoons baking powder
- 2 cups spinach
- 1 banana
- 1 egg
- 1 cup milk

When it comes to smoothies – are you a chugger? Or, a sipper?
Quick, tasty, portable, veggie and fruit packed, green smoothies are a favorite of mine when temperatures start getting warmer. They are also a favorite of mine when I need some balance on days filled with chocolate cake with peanut butter icing! And, provided the smoothie isn’t brain-freezing-cold, I can make my favorite smoothie disappear in 0 to 52 seconds. I know…I know…you want to time your chugging speed, right? Go ahead, I will wait…so, how did you do?
Somedays, I love that I can chug my smoothie down so quickly.
But, every now and then, I like to savor it, to linger and laze around, while sipping on it.
But, unlike finely aged cheese, my green smoothies do not get better with time. In fact, after a couple of hours, they have more in common with a cup of day old, cold (not iced) coffee.
So, every now and then, on days when I want to linger over my smoothie, I turn it into a pancake. Of course, I add a little bit of rice flour or gluten-free oat flour, an egg, and some baking powder to help the smoothie transition better into a pancake – but the base ingredients (spinach, banana, milk, and protein powder) remain the same.

I have been trying different protein powders recently, and for these pancakes, I used a whole cup of unflavored Isopure Whey Protein Isolate, which is one of many protein powders I like to use.

Ingredients
- 1 cup Isopure Protein Powder
- 1/2 cup brown rice flour
- 2 teaspoons baking powder
- 2 cups spinach
- 1 banana
- 1 egg
- 1 cup milk
Instructions
- Place all the ingredients in a blender and pulse till well incorporated
- Pour about 4-5 tablespoons of batter into a greased pan on a low-medium flame (the flame need to be low enough so the pancakes don’t burn but still cook -might take a sacrificed pancake or two at first)
- Let pancake cook for 3-4 minutes and flip and let cook another 2-3 minutes
- Repeat with the rest of the batter
- Top with bananas, strawberries, syrup or any toppings you desire.

Wow! What an awesome pancake. Packed with loads of good stuff. I thought at first you used matcha but they are far too green for that and gorgeous. You know I was just reading an article that us smoothie drinkers are putting our livers at risk as the sweet all fruit smoothies are just a fast quick carbohydrate that your body can’t handle well and they need to be mostly green/veggie to avoid that toxic fast load to your liver… So your perfect little pancakes are a great solution to that problem. This genius Shashi- I am a huge green smoothie drinker but never thought to turn them into pancakes. I’m definitely smoothie sipper- mine always end up being way too thick to chug…in fact some days, a straw isn’t enough & I’ll find myself reaching for a spoon!
