I have been trying to cook with tofu more, but I like mine extra crispy otherwise I cannot take the texture. Yours looks amazing!

  2. Wow – what a great story about the plumber that helped you out and wouldn’t let you pay him. So good to know that there are people like that still!!!

    1. Yes Kim – I am so thankful to have crossed paths with him. He loves to talk and he was going on about how he is getting old and stuff and I kept trying to talk him out of this old bizness – I mean, he simply cannot retire! 🙂

  3. First, I love the pepper jelly and the sun-dried tomatoes you have in this! That sounds like one awesome combo! And second – I love these stories you share. Reaffirms my belief that there are really good people in this world.

  4. Love the sound of this dish! Tofu is one of the most versatile foods. I love how it takes hold of the flavors your cook it with. It’s like a delicious little sponge!

And thanks for the plumber contact. I will pass it along to my parents in case they ever have issues (hopefully not!).

    1. Tofu’s absorption powers is why I love it so much too! I sure hope your parents dont need a plumber too – this weather has been so cold for Atlanta – we are going on almost 16 days of temps around the 30 mark….I know its not as bad as the northern cities and states, but Iam a cold wimp!

  5. Sundried tomatoes, potatoes & well seasoned tofu all sound lovely together! I’m familiar with Trader Joe’s spicy jelly…it was ok, but never thought to use it in a tofu hash! I’m so sorry to hear about the flood in your kitchen, I’m just glad it isn’t a real flood! Hope that’s sorted soon. I wish I know some people in Atlanta 🙂 I have yet to go there, too! Sending you lots of luck! – Rika

  6. Wow, so glad to hear the plumber fixed it and such a nice man for not even wanting to charge a penny – love all your nice stories 🙂

  7. We need more people like Mr Robinson in NYC.
Last time I’ve called a plumber, the guy who showed up was awful and he totally ripped me off.

Great recipe btw, gotta love sun-dried tomatoes!

    1. My sis used to live in NYC and she was always thankful to be a renter as she just had to call maintenance for all her repairs! No haggling involved – of course with Mr Robinson it was reverse haggling with me saying “How bout I give you $30 for gas” him “no, i have another job close by” me “how bout $25 for pizza for you and your wife” him “you and your daughter should be getting the pizza, my wife and I are on a diet” me “how bout 20 for a cuppa coffee” him “I dunno where you get your coffee from, but I am not going there”! GAH!
      🙂

  8. What a nice plumber! So great to hear stories like that, and I am glad you got everything under control!
