Tomato Chickpea Burgers
Simple, Quick, Easy, and Tasty, Tomato and Chickpea Burgers are perfect for these hectic back-to-school nights!

If you’ve ever worked with Photoshop, there’s no denying its crazy editing powers…
Hair can be added to bald spots; a green lawn can appear without brown spots; necks can be lengthened; streets can be widened; I mean, there’s really no end to what a few clicks can do!
Sometimes, a few clicks can result in something controversial: as in those highly edited print advertisements…
And, sometimes, a few clicks can result in something just mind-blowing…

Recently, I was perusing the interwebs, when I came across “foodscapes” by Carl Warner.
Mr. Warner has been around perfecting his art of photography and photo manipulation, for the past 15 years, but I just found out about him and his amazing talent of using vegetables and fruits to create mind-blowing landscapes, or, rather – “foodscapes”!

I then proceeded to spend way, way too much time feasting my eyes on his Onion Taj Mahal, his Celery Forest, and his Salmon Sea.
To be honest, I’ve never been much a salami fan – but, I gotta say, salami never looked so good as in his Salami Mountain or Salami Tuscany.
In one article, Mr. Warner was quoted as saying: “It’s really quite fun… just creating something from nothing. I like the idea that I can grab a bag of groceries in the morning, and in the afternoon I’m retouching a photograph of a beautiful broccoli forest. That really inspires me, because it makes you think you can do so much with so little.“

And, doing “so much with so little“, is all what these burgers are about!
These are simple vegetarian burgers, made with Red Gold Petite Diced Tomatoes and Green Chilies Red Gold Tomato Paste, and chickpeas.
An egg, a little seasoning, and these burgers were ready in less than 30 minutes!
Simple, easy, and quick!
My daughter and I eat these with a side of Spicy Pineapple and Mango Sauce. Since we managed to polish off all these burgers last night, I am just sitting here wishing I could use Photoshop to clone or “rubber stamp” a copy of these burgers for lunch today!

Ingredients
- 1 10 oz . can Red Gold Petite Diced Tomatoes & Green Chilies
- 1 15.5 oz . can of chickpeas
- 1 clove garlic chopped
- 1 egg
- 1 tablespoon Red Gold tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 3-4 tablespoons olive oil
Instructions
- Add the olive oil to a pan and let it heat up over a medium flame
- Meanwhile, add the chickpeas and the Red Gold Petite Diced Tomatoes & Green Chilies to a blender and pulse till chickpeas are broken down
- Scrape this into a bowl and add the chopped garlic, egg, Red Gold tomato paste, paprika, and cumin – and mix well.
- Form into circles and let cook/fry/brown in the pan with the olive oil for 3- 4 minutes (or till golden) on each side.
- Enjoy with Spicy Pineapple and Mango Sauce!

AS you know Shashi I’m a HUGE fan of chickpeas and very much so with chickpea burger variations. I love how you use red gold tomoto paste in these too I’ll need to look out for that, and try that taste.

I love chickpea in many ways, but I think I’ve never made burgers! These look delicious. I would probably have taken smoked paprika instead of regular (Jast saying):) Well done!

……How did I not know about Foodscapes?! Geebuz. Although, these tomato chickpea burgers would give it a run for it’s money- Paprika and Cumin are foods of the God 😉 I mean spices!

I actually use Lightroom instead of photoshop but I wanna try using photoshop too! I love diced tomatoes and the pineapple and mango sauce for these burgers!!! May I ask how crumbly these were? I recently tried making chickpea patties without an egg to bind but had no luck because they wouldn’t stay together . . these look great so was just wondering how well they hold up!

Woah. Those foodscapes are crazy. I’ve never come across those before, but how awesome! I’m pretty sure I want to live in the broccoli forest now. My address? 1 Broccoli Forest Lane. Or maybe 6 Chocolate Express Drive has a better ring to it. Haha! And these burgers? They sound delish, Shashi!!
As much as I love broccoli, I gotta say “6 Chocolate Express Drive” has a way way better ring to it! I think I could live IN that chocolate express of his – though Lil Shashi and I might eat OUR way through it and be homeless…in which case we’d have to bum a stay with you and Mrs. Spiced …but then we might end up eating our way through y’alls home too…and ugh…things could get ugly….maybe Lil Shashi and I should just stay in the Broccoli forest after all! 🙂

Whoaaaaa–just went to foods capes and holy crap his photos are insane! My mind is confused by how he does it, but the photos are so cool. …..kind of like these burgers!! 😀 I’m all about the chickpeas in any form, but burger form is perfect for summertime.
