White Chocolate Sweet Potato & Raisin Bites

This year, inspite of all the mouthwatering cookies posted on a lot of the blog’s I read (that almost led me to lick my screen), I decided to forgo a Christmas cookie platter at our home. Last night, I made my daughter some hot chocolate with beets in it to help soften the blow of this news – but she didn’t seem to mind – all she said was “I got a cookie cake for my birthday with extra frosting, I’m cookie-d out!”. I told her there won’t be any chocolate chunk peppermint cookies, no linzer cookies, no wedding cookies, no sugar cookies, no peanut butter rice krispie balls, and all she said was “ok“.
I was beyond elated at first – then shocked – and then I began to wonder – why is she being so calm about this? THIS is a kid who is fed wholesome ingredients like either beets or raisins or spinach or oats in just about every sweet treat she has year round; THIS is a kid who is a master negotiator and briber as to why the Christmas cookies I make are not to contain anything healthy; THIS kid was giving up so easy?! Just at this moment, she nudged me and said “those bites you make – those are not part of the cookie list, so they will be happening – correct!” She wants to be a pediatrician, but I think she has attorney all over her!
Which brings me to these bites!
These bites (minus the white chocolate coating) contain:
• Sweet potato
• An egg
• California raisins {California Raisins come by their sweetness naturally with ZERO fat, no cholesterol and with 9% of your daily fiber and potassium, and 6% of your daily iron. (per quarter cup serving).}
• Oats
• Coconut oil
• A dash of salt
• Some spices {cinnamon, nutmeg and cloves}
With no white or brown sugar in them and full of wholesome goodness – I figured I would submit these bites (with coating)/appetizers (without the coating) to the Recipe Redux‘s holiday contest “Naturally Sweet for the Holidays with California Raisins“.
I threw the raisins and sweet potato and egg into a blender and folded in the other ingredients and the result was… pretty darn scrumptious …and can be enjoyed cooled -without the white chocolate coating- however, life is about balance and I figured the white chocolate would marry all the other flavors together and my daughter gave me her puppy dog eyes as she suggested it!

Ingredients
- 1 baked medium sized sweet potato I baked mine for about 45 minutes so it was extra soft
- 1 egg
- 1/8 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cloves
- dash/pinch of salt
- 1/2 cup California Raisins
- 1/2 cup California Golden Raisins
- 1/4 cup + 1 tablespoon coconut oil melted
- 1/2 cup oats
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 375
- Toss California raisins and golden raisins into a blender/food processor and blend till they are almost like a "mash" %http://savoryspin.com/wp-content/uploads/2014/11/raisins-150x150.jpg
- Toss in sweet potato and egg and blend well
- Using a spatula or spoon, fold in the spices, salt, 1/4 cup coconut oil and oats (can be done in blender/food processor or in another bowl)
- The mix will be wet - I greased my hands with coconut oil and formed mix into bites
- Bake bites for 20 minutes
- Let cool
- Melt 1 tablespoon coconut oil and white chocolate in a pan and drizzle onto cooled bites
- Let white chocolate harden before devouring
- Bites can be stored for upto 4 days in the fridge in an airtight container
