Easy Almond Chocolate Coconut Bars
These delicious, NO BAKE, Easy Almond Chocolate Coconut Bars are perfect for breakfast or a snack or maybe even dessert! Go ahead – I dare you to try and not enjoy these dairy-free and gluten-free, 6 ingredient bars!

Bill Watterson, the creator of Calvin and Hobbes, once said that “Life overall should be more glamorous, thrill-packed, and filled with applause…“. And, this past weekend, mine was so incredibly thrill packed! You see, this past weekend, I took the money I have saved and went and bought me a glamorous blender/food processor!
When I brought it home and it made almond butter in 13 minutes, I couldn’t help applauding!
Of course, “glamorous”, “thrill packed”, and “filled-with-applause” are subjective…and, the root cause of these emotions tend to vary for each of us – but, Y’ALL, I got me a blender! FINALLY!

Of course, I ended up making so much almond butter that: I took some to work, used some to make these no bake, Almond Choconut Bars, and have some to take to my sister.
We are planning a trip to Dallas to see her soon and figured it would be more realistic for me to take her some almond butter, because, let’s be serious – these Almond Choconut Bars are not going anywhere! Yes, I have sharing issues – I was, after all, an only child for the first 5 years of my life.
These past few days, these bars have been my source of fuel as I’ve been staying up way beyond my bedtime, looking up travel deals.

What a fantastic recipe!!
Have never tried to make almond butter but I reckon I should! These bars look terrific.
LOVE! There’s no way I’d be sharing these babies either. I mean… almonds, chocolate, and coconut? It makes me weak in the knees just thinking about it. And I’ve always wondered if my slight unwillingness to share things was the result of me being an only child. I’ve always wanted a brother or sister (mostly a brother), but I guess it just wasn’t in the cards…
Your bars look wonderful, what a great snack to have on hand!
These bars look so damn delicious Shashi! Coconut+ almond sounds like an amazing combo! Almond butter is beyond YUM! 🙂
These bars are amazing!! I wish they would appear in front of me right now! And I will have to look into this family plan – the one we are now sucks!
Seriously wish I had your new blender Shashi!! I would LOVE to be able to make my own nut butter at home! It’s a dream of mine lol! These look absolutely amazing, and as soon as I get a powerful enough blender, I’ll definitely be making them. Love the chocolate drizzle on top!
I sure hope you get a blender soon – homemade nut butter is just so darn good! Thanks so much Harriet!
These bars! Oh my gosh. They look absolutely deeevine! Definitely pinning this to try soon! I’m planning a Whole Foods trip this week so it looks like I’ll be buying almonds in bulk to make these!
Thanks so much Megan!
Hey – if you happen to have a Trader Joe’s or discount warehouse by you, almonds in bulk are a lot cheaper there!
Oooh this is good to know. Whole Foods is usually my go-to for bulk ingredients, but they are starting to hurt my bank account a bit! I’ll have to search for a Trader Joe’s!
Dude! These bars look delicious, Shashi! I can totally understand why you wouldn’t want to share these with anyone…except perhaps the maillady. I hear she likes pretty much anything! Haha! Have fun in Dallas!!
Duuuude, who you calling a dude????? This here’s a dudette!!!! 🙂
You know what – I’m gonna be home early today, so, I am gonna wait for that mail-lady and chase her down the street myself, instead of getting my dogs to do it – and ask her where that brownie bite cheesecake you sent is!!!!
Thanks Duuuude!
since you’re coming to dallas, mind jumping down to austin and visiting me?? PLEASE?! and bring these gorgeous bars!
Haha! Thanks Lindsay! Hey I have a better idea – come to Dallas and you can steal ALL the almond butter off my sister’s counters! deal?
