Beet Berry Waffles
These gluten-free, cardamom and cinnamon-laced Beet Berry Waffles can be whipped up in the blender – and with a healthy dose of beets and berries, they are a perfect way to get your day started!

The dictionary defines “adore” as: “to love or admire very much,” “to like or desire very much,” “to worship or honor as a deity,” and/or “to regard with loving admiration and devotion” – and these all fittingly describe my feelings towards beets!

Yes, the humble, sometimes just plain gnarly, beetroot, holds a special place in my heart. And – as fate may have it, it just so happens to be good for my old ticker and other bits and pieces of me as well!
I understand that you might not entertain the same feelings towards beets as I do and for that I’m truly sorry.
But maybe if you happened to try these Beet Berry Waffles or moist and delicious Beet Chocolate Oatmeal Cake or Beet Soup, you might change your mind?!
Ingredients
- Vanilla protein powder
- Tapioca flour
- Eggs
- Non-dairy milk of your choice
- Salt
- Olive oil
- Beet puree (I roasted a couple of beets for 45 minutes at 375 degrees, then peeled them and pureed them in a blender)
- Cardamom
- Cinnamon
- Vanilla
- To garnish: melted chocolate non-dairy whipped topping, raspberries, blueberries
Instructions
- Place the protein powder, tapioca flour, eggs, non-dairy milk, salt, olive oil, beet puree, cardamom, cinnamon, and vanilla in a blender and pulse till well incorporated.
- Using a spatula, gently fold in the berries.
- Pour 4-5 tablespoons or enough to make one waffle onto a heated waffle iron and let cook
- When waffles are all done, serve with non-dairy whipped topping, melted good quality chocolate and raspberries and blueberries.

What foods would you say you “adore”?
Mmm stacks on stacks on stacks a.k.a. the ONLY way waffles should be served – looks delish! In terms of being a messy cook, I try to be efficient about it i.e. clean up as I go along wherever possible. The absolute worst is to be left with a big fat mess to clean up in the end. Aside from waffles, other foods that I ‘adore’ include peanut butter, chocolate & Greek yogurt…and blueberries especially of late!

I’m somewhat of a messy cook. When it comes to dishes, I try to minimize for clean up purposes. But when it comes to actual messes, I just know I’m going to have to clean the countertop a few times! I feel like it comes with the job! Thank you so much for sharing such a delicious recipe!

Wow, these beet berry waffles look amazing! I’m so impressed that they’re gluten free too! Meanwhile… the stains… the beet stains! What a side effect, as you call it, of “beet adoration.” You’re hilarious, btw. 😉 I also just read in one of the comments that your sister convinced you to just bleach the stains out… Lol. Allie – prior to Shout, my sis convinced me to just bleach the heck out of those beet stained tshirts, even resorting to make patterns with bleach to rectify bleach-jobs-gone-wrong – mindblowing to think I could have avoided it all with a little bit of Shout! 🙂

I love the berry beet combination especially the way you’ve paired them with waffles. I’m a pretty clean cook for the most part but beets are always a bit messy!

These waffles are too die for!!!! I can believe they have beets! I’m seeing beets everywhere nowadays, hidden in so many great dishes like this one. Last night at a restaurant we were served beet whipped cream over avocado ice cream. Crazy right?
