Chocolate Drizzled Hazelnut Bites
How quickly can you add 9152 + 8599? Or, come up with the answer to 95 x 89? Nope – this isn’t a math test – but, I was mesmerized by an advertisement I saw that showed 7 and 8 year olds adding 4 digit numbers and multiplying double digit ones in less time than it usually takes me to hit my snooze button Monday through Friday! I don’t remember what the product was that helped them compute so quickly – but, in honor of their quick computing, I decided to make the 3 day weekend we just had, into a 7 day weekend! Yup, I took most of last week off and, instead of planning a trip to someplace outside Atlanta or actually heading out on a trip out of here (like I usually do), I stayed put and enjoyed a stay-cation with my kiddo. Other than fighting off hornets, my daughter and I did venture outside of our yard – one of the places we ventured to was the Swan House. The Swan House, which is part of the Atlanta History Center, was built in the 1920’s and has gorgeous woodwork and embellishments throughout the house. From fireplaces, to chandeliers, to even the walls – there’s so much to “ooh” and “aah” about – that is if you are into architecture and/or The Hunger Games & Catching Fire, as in both movies, The Swan House was used as President Snow’s home. But, you don’t have to be a fan of the Hunger Games/Catching Fire to be in awe of the beauty of the interior and the exterior grounds of this amazing place. Not pictured were parts of the trail that looped around The Swan House through dense woods. All that trail walking and exploring left us gals famished and I sure was glad to have packed some of these little bites to nosh on! These bites are packed with energizing Bob’s Red Mill Hazelnut Meal and almond butter; and drizzled with chocolate – they are a reason to not need my snooze button in the morning! However, trying to share them equally with my daughter always leaves me wondering about my own math skills!

Ingredients
- 3 cups hazelnut meal I used Bob’s Red Mill
- 1/2 cup brown sugar
- 1 egg
- 2/3 cup coconut oil
- 1/2 cup almond butter
- 1/2 teaspoon cinnamon
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350 degrees
- Mix all the ingredients well in a bowl and form into bite sized balls/bites
- Place on a parchment lined baking tray and bake for 20 minutes
- Melt chocolate in a glass bowl over boiling water or in a microwave at 30 second intervals
- Drizzle on top of bites and let cool before devouring.

Staycations are the best! I still haven’t tried hazelnut flour, but these bites are definitely tempting me to buy a pack.

these look so good – I need something like that for a snack that packs nutritional power. Ive had a bag of hazelnuts sitting in my pantry and I dont know what to do with them. This gives me a great idea.

I haven’t been to the Aquarium but I have been to Stone Mountain. The last time my in-laws were down here, we also went to the Cyclorama, Atlanta Underground and the old World of Coke museum. That shows you how long ago that was!
In my opinion, the New World of Coke isn’t a whole lot different, just more shinier – well, I haven’t been to the Cyclorama and I have been here almost twice as long as you have! Yikes! 🙂

The Swan house is just beautiful, one day I would love to see it. The hazelnut chocolate bites are great, hazelnuts and chocolate are so perfect together and extra bonus these little bites are good for you. YUM. So glad you and daughter got to spend some time together.
Thanks so much Suzanne – there’s so much of the Swan House and the adjoining plantation that’s simply breathtaking (that I did not post pictures of) – part of the plantation is a “working farm” where actually vegetables are growing and animals are raised for eggs, milk, etc and everyone who works on it are dressed like they did back in the 1920’s – so intriguing!
Stay-cations are the best! I always want to take one after I get back from a regular vacation and am exhausted! haha

My problem with baked treats is I cannot just stop at one… So I know I would eat the entire batch of these and then I would want to make MORE!!!!!!
