This Easy Grilled Brussels Sprouts & Summer Berry Salad has charred Brussels Sprouts and grapes mingling with crispy butter lettuce, sweet blueberries and salty and tangy feta for one heck of a taste-sensation in your pie hole!
Eight months ago, my daughter’s decision to become a vegetarian had me bumfuzzled!
I mean, she worked for a large fast food chain that had chicken all across their menu… and… what was to become of our bacon brunches!?
To be honest, I took comfort in assuming that this phase wouldn’t last.
Just like her googly-eyed infatuation with Nick Lachey, I figured her flirtation with vegetarianism would also be over in a blink and a sneeze.
But, alas, I was wrong.
Eight months in and she still follows me around the grocery store and points out the fact that meat is murder every time I try to pick up my favorite sausage or eye some bacon.
Which usually ends with me walking away from said product and stocking up on ALL the fruits and veggies that happen to be on sale at my neighborhood Kroger store.
Of course, while I maybe getting a deal – I’ve had a hard time trying to come up with ways to store all that produce before it goes bad.

After my last produce run, I’ve been thrilled to store my loot of BS (Brussels Sprouts), grapes and blueberries in Rubbermaid® FreshWorks™ produce containers and not have to cook the whole lot. Recently, my daughter and I were both craving a salad AND some grilled Brussels Sprouts …hard to resist charred up BS eh?! Well, I figured why not put the two together and grill up some grapes too and throw in some blueberries and feta with some crisp butter lettuce and call it an Easy Grilled Brussels Sprouts & Summer Berry Salad – or like my daughter called it, an Easy Grilled BS Summer Berry Salad!
We didn’t need any dressing with this salad – but, if you need one, a light balsamic would be wonderful. There’s really no exotic spices included – I simply grilled the Brussels sprouts with some olive oil, salt and pepper. The grapes I added onto some foil and placed them on the grill as well, which gave them such a unique depth of flavor. Again – simply salt and pepper with the grapes as well. But – it was the mingling of the grilled Brussels sprouts, roasted/grilled grapes, feta, blueberries and butter lettuce that was magical!

Ingredients
- 1 cup Brussels sprouts
- 1/2 cup green and/or purple grapes
- 1 head butter lettuce
- 1/4 cup blueberries
- 4 teaspoons feta
- olive oil
- salt and pepper to taste
Instructions
- Make sure to brush the grill with some olive oil.
- Then, wash and trim Brussels sprouts and cut in half, brushing both sides generously with olive oil, before placing on the grill.
- I only kept mine on the grill for about 5 minutes on one side, before flipping and placing them over and grilling for 4-5 more minutes - but, grill times and temperatures vary so you might want to keep an eye on yours. Season the Brussels Sprouts with salt and pepper when done and set aside till room temperature.
- Wash the grapes, cut in half, and place on some foil and place foil on grill and let roast up for 6-8 minutes as Brussels Sprouts are cooking. Take off heat, season with salt and pepper and let cool a bit.
- Meanwhile, wash the butter lettuce, dry it and chop it up roughly.
- Also, wash and dry the blueberries.
Assemble the salad:
- To assemble the salad, add butter lettuce to a bowl, toss in some grilled Brussels sprouts and grapes. Then toss in some blueberries and top with some feta and enjoy!

Oh my gosh, I totally love brussels! And I really, really love grilled brussels! So of course any salad that starts with grilled brussels is going to be right up my alley. The little bit of blueberries in there is a great touch, too. Funny thing is that we are about ready to replace our food containers…and I’m definitely going to check those Rubbermaid ones out! What a wonderful salad, and it’s perfect for your daughter (Well, if she doesn’t decide to be a vegan…you’ll need to handle feta then). I do, do love Brussels sprouts and salads with it. Though, I do eat my fair share of vegetarian and vegan dishes. While I don’t think I could be vegan (hellooooo cheese) I do think I could be vegetarian. I could eat this salad all summer long. A salad with Brussels sprouts eh? That’s a first for me and wow doesn’t it look and sound delicious.
BTW Lynne is wanting to go vegetarian. I mean I cook Mediterranean style all the time so it’s mostly fresh veggies, fruits, nuts and fish but I just couldn’t do without my meat every now and then, so I know how you feel!
How come were you still able to find the fresh brussls sprouts at this time of the year? I really miss this beautiful winter veggie. The salad looks wonderful.
