This past weekend was enjoyably hectic for my daughter and me. We squeezed in a day trip to Greenville, SC on Saturday and then drove to Atlanta to spend some time with my mom and sister for Mother’s Day. Seeing we live in Athens, that’s a whole lotta time in our car ~ time for debating the pros and cons of pineapple on pizza (are you a fan?), savory oatmeal vs sweet oatmeal, and, what’s for dinner?!
Yes, we do talk about food ~ A LOT! Hence the food blog -eh? 😊
But all that talking and driving left us with less time for cooking. When we got home, I had less than 30 minutes to whip up dinner.
As I had picked up some Smithfield Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin from Walmart, along with some fresh pineapple, I decided I would slice them up (so they cooked faster) and throw them on the grill while I tried to get laundry done before the day was done.
Of course, I wasn’t paying attention to the timer or the grill ~ until I smelled the delicious aroma of charring Smithfield Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin. I flipped the slices of pork tenderloin and pineapple over. Then, I used the grilled pineapple to whip up a quick and easy pineapple salsa as I thought the pork might have been over-grilled.
But, when I plated that Smithfield Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin and cut into it, the knife sliced through it like it was a slice of cake with frosting!

Ingredients
- 1 Smithfield Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin
- For The Grilled Pineapple Salsa
- 5-6 medium tomatoes
- 1 red onion
- 2 tbsp fresh cilantro
- 2 slices grilled pineapple
- Salt and pepper to taste
- For The Cabbage
- 2 tbsp olive oil
- 1/2 a small green cabbage
- 1 yellow onion
- 2 cloves garlic
- Salt and pepper to taste
Instructions
- Slice and grill the Smithfield Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin for about 6-8 minutes or so on each side.
- Also grill the pineapple slices for about 3 minutes on each side.
For The Grilled Pineapple Salsa
- Peel and chop the onion, wash and chop the tomatoes, pineapple and cilantro and place in a bowl
- Toss well
- Season with salt and pepper and serve on top of grilled slices of Smithfield Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin.
For The Cabbage
- Chop onion and add to a pan with olive oil. Let onion saute, stirring a few times, for about 10 minutes while pork is grilling.
- Chop cabbage and add to the onions along with diced garlic and let simmer about 5 minutes.
- Season with salt and pepper (and cilantro – optional) and enjoy with grilled Smithfield Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin and grilled pineapple salsa.

Debating pineapple on pizza is one of those age old questions that there will never be a right answer. It’s a love hate relationship. But pineapple salsa with char grilled pork sounds utterly delicious, and such a good combination. A perfect meal to have after a day of travelling and chatting.
My family and I adored this meal! It is full of such wonderful flavours. Pork and pineapple are a match made in heaven.

So I have to admit that I had a pang of homesickness when I say Greenville. My grandparents lived in Belton, SC, which is about 30 minutes from Greenville. I spend many wonderful summers in that part of the country!! I hope you gals enjoyed your day trip!
