  2. I love how you grated the beets for this recipe – I don’t think I’ve ever grated beets before. I hear ya on the texture of chia pudding, too. It’s not my cup of tea, but I also haven’t tried blending it. I’ll have to try that out because this recipe sounds super tasty and healthy…and perfect for spring!!
