I love this Radish Sausage Quinoa Salad because of all the flavors and textures it has going on. There’s the ever so slightly caramelized, soft, onions, fresh ginger, crisp celery and crunchy radishes, soft and nutty quinoa and flavor-jammed Eckrich Jalapeno & Cheddar Smoked Sausage Links.
While my daughter and I love to have Eckrich Turkey Skinless Smoked Sausage Rope with eggs and avocado for breakfast or sliced up on flatbread for dinner, this was our first time trying Eckrich Jalapeno & Cheddar Smoked Sausage Links. This was so flavorful that I opted not to use any of my usual spices when I used it in this simple Radish Sausage Quinoa Salad.
Just like these Easy Zucchini Sausage Flatbreads, this Radish Sausage Quinoa Salad is not only easy to pull together, but it doesn’t require any elaborate measurements either. I used roughly 3 celery stalks and about a half dozen radishes along with an onion, garlic, and a half cup or so of leftover cooked quinoa.
But you can use bell peppers, broccoli, and cous cous instead. Or, Brussels sprouts, cabbage and even black rice, if you wish. However, make sure you use an onion, some fresh ginger and fresh garlic and, the star of this Radish Sausage Quinoa Salad: Eckrich Jalapeno & Cheddar Smoked Sausage Links!

Some evenings, I like puttering around in my new tiny yard. But, all that outdoor time after work leaves me with very little time to prepare dinner.
As I’d much rather throw something together than pick up take-out, I have been resorting to quick and easy dinners like those Zucchini Sausage Flatbreads and this Radish Sausage Quinoa Salad that don’t need a specific recipe and can be prepared with ingredients I have lying around.

Ingredients
- 2 tbsp olive oil
- 1 red onion chopped
- 4 cloves garlic chopped
- 6-7 radishes washed and sliced
- 3 stalks celery washed and sliced too
- 1/2 cup quinoa cooked
- Eckrich Jalapeno & Cheddar Smoked Sausage Links
- pepper
- 1/2 lime
Instructions
- Add olive oil to a pan and when the oil is slightly warm, add in the onions and saute about 10 minutes, stirring often.
- While onions are sauteing, wash and slice radishes and celery.
- Slice Eckrich Jalapeno & Cheddar Smoked Sausage. When the onions are translucent around the 10 minute mark, push the onions to the side of the pan with your spatula and add in the sliced Eckrich Jalapeno & Cheddar Smoked Sausage Links. Let sausage slices brown for about 3 minutes, then flip and let saute another 3 minutes.
- Add in the radishes and celery as well as garlic and stir well. Let saute about 2-3 minutes so veggies stay crispy.
- Add in the cooked quinoa and stir well until all ingredients are well incorporated.
- Season with pepper, squeeze a bit of lime onto quinoa and sausage mix and enjoy with a cucumber salad.

A very yummy looking salad. Perfect for a spring lunch. We don’t have Eckrich Jalapeno & Cheddar Smoked Sausage over this way. Wish we did because it sounds amazing. We have plenty of other sausages to choose so I’ll be whipping this one up soon.

I absolutely love smoked sausage, so this one is a no-brainer for me! But as I looked at the recipe, I remembered how much I like radishes. It’s been a while since I’ve used radishes in a salad (no excuse why not…I just forgot how much I liked ’em), so I totally need to make this recipe soon. It sounds like a delicious weeknight recipe for sure! I’m sure you gals are warmer than us, but it’s getting warm enough up here to go to the park with Robbie after preschool or putter around the yard. I love this time of the year!
