In this oven roasted vegetable salad, sweet beets, sweet potatoes, broccoli florets, and onion are slathered generously with a garlic and harissa oil. These vegetables are then baked until they are tender. As the vegetables soften, the grated bits of harissa-spiced garlic in the oil tend to crisp up. When you scoop up a spoonful of this, each forkful is filled with flavor.

What are the ingredients needed to make this oven roasted vegetable salad?

I use the following 8 main ingredients, along with salt and pepper. And sometimes also add in some parsley and chili flakes for garnish.

Beetroot
Broccoli florets
Sweet potato
Onion
Garlic cloves
Harissa
Olive oil
Eggs

Instructions

Preheat oven to 400 degrees Fahrenheit.
Peel and chop the beetroot, sweet potato, and onion into bite-sized pieces. Chop the broccoli into bite-sized pieces, too. Arrange these onto a sheet pan lined with aluminum foil.
Place the olive oil in a bowl. Peel the garlic and grate it into the olive oil. Add the harissa to the olive oil and garlic mixture and mix well.
Brush this spiced olive oil onto the vegetables or drizzle it onto them and toss the vegetables so they are well coated.
Bake at 400 degrees for 40 minutes
While the vegetables roast, boil the eggs to your preference.
Remove the vegetables from the oven and season with salt and pepper. Then, place them in a bowl or divide among 4 plates.
Chop the eggs and add them to the roasted veggies or serve on the side.
Garnish with parsley and chili flakes, and enjoy.

Warm Salads and Cold Weather

Way back during my freshman year in college, I happened to get into a conversation with an older gentleman on a bus. The conversation got around to the weather, and he shared that every time he was in a place where the lowest temperature was lower than his age, he would move! Just like that – he would pick up and leave!

Now, I don’t quite remember his name or exactly what he looked like, but that line has fascinated me ever since! Every time the temperature drops here in Georgia, and my Sri Lankan-heat-loving-roots start showing, I often ruminate on his “musings” – and wish I could click my heels together and be transported to somewhere warm, at least for just one day!

Variations

This oven roasted salad can be made with parsnips, carrots, and cauliflower instead of beets, sweet potato, and broccoli.

To make this vegan, canned chickpeas or black beans can be drained and rinsed and added to these vegetables before they bake for a serving of plant protein, instead of the egg.

Nuts like roasted pistachios or pecans can be tossed in, too.

Instead of harissa, curry powder, garam masala, or any other spice blend you love can also be used.

Recipe Tips

Don’t overcrowd the vegetables. Try and spread them out.

Cut the vegetables into approximately the same size. The smaller they are cut, the quicker they will bake.
