Savory Sweet Potato Pancakes
Between you and me – is there something that you adore – but you don’t crave?
Even though you love it, you can do without it, but the moment you get to experience it – you cannot seem to get enough?
For example let’s take chocolate cake, you might adore it – but you manage to convince yourself you don’t need it for breakfast, lunch and dinner – you might even make it many months without tasting a sliver – but then you end up with a slice on your plate – and you realize what true love is! Okay so maybe I shouldn’t go that far – but, you get my drift?
Well, this past weekend, my “chocolate cake” happened to be “Friday Night Lights” (the TV series)!
Forever one who always seems to miss the bandwagon, I didn’t watch Friday Night Lights when it first came out in 2006. But, over the last couple of months, my daughter and I worked our way through all five seasons – with a marathon vegging out session this past weekend which resulted in us finishing the whole series! I don’t believe it took us 2 months to finish 76 episodes (and here I was thinking I didn’t even like watching TV)!
My daughter and I couldn’t help but root for the characters through their struggles and cheer them on through their triumphs – both on and off the field. There were so many episodes that sparked feverish discussions between my daughter and I; the teen daughter rebelling; the brother who went to jail for a crime his brother committed just so his brother could stay and be a dad to his son; the gifted and cocky player who was humbled before he landed a scholarship; the player who made a life for himself when all hope seemed to be lost after a horrible accident…if you have watched this series – you know the heart and depth of the scenarios in it – if you haven’t, I would highly recommend it – but maybe not finishing the whole series in 2 months! 🙂
Marathon vegging out sessions need fuel – and that’s where these pancakes come into play. These savory sweet potato pancakes were our brunch –and– kept chocolate cake off our minds through out our marathon TV-viewing.
Made with sweet potatoes and chick pea flour – these are gluten free. And flavored with garlic, onion and cumin – these are definitely not taste free! We had ours with a side of date and tamarind chutney.

Ingredients
- 3/4 cup sweet potato baked and mashed
- 1/2 cup chick pea flour besan flour
- 1/2 cup almond milk
- 1 egg
- 1 garlic clove chopped finely
- 1 tablespoon finely chopped onion
- 1 teaspoon baking powder
- 1/8 teaspoon cumin
- dash of salt
Instructions
- Mix all the ingredients together
- Then, drop 3-4 tablespoons onto a skillet, coated with olive oil or butter
- Cook on a low flame for 3-4 minutes and flip and cook the other side for another 3-4 minutes
- Serve with date and tamarind chutney
I should make pancakes oftener. These look great with sweet potatoes.

I’m notorious for missing bandwagons… especially when it comes to TV shows. Heck, I still haven’t watched Lost or Dexter despite the fact that both have been on my to-do list for… years? 😆 And it’s the same with food! There are certain things (soup and pancakes come to mind) that I won’t bother eating for months and months, randomly make them, and then wonder why I don’t make them more often. I am glad I am not the only one! I think we need to start another bandwagon -one that leaves the station about 6 years after the first one! And maybe we can deck it out with ALL the chocolate and pancakes and stir fries!!! yeah!? 🙂

My “chocolate cake” is definitely asparagus. When it’s crisp and perfectly steamed, with just a touch of lemon juice and sea salt, it’s like freaking candy!! I could eat it by the bushel full!

Asparagus you say? I have a coworker who is addicted to green beans – though she isn’t picky about how they are cooked – she will eat ’em boiled, steamed, fried, fresh, frozen, canned, it doesn’t matter – I keep thinking she is gonna turn green one day! Then we will know how the hulk got his color! 😉

I never got into Friday Night Lights, but we definitely know all about vegging out and watching a marathon of reruns. For us, it’s typically Law and Order: SVU, although Game of Thrones may need to be rewatched again before the new season comes out in the Spring. That’s the best part about the holidays…oh, and savory pancakes are the other best part of the holidays. We have a bunch of leftover sweet potatoes downstairs, and I think I need to make these ASAP. Unless you want to try and send me some, of course. Haha! 😉

I used to watch Law and Order SVU till they got rid of Christopher Meloni (Stabler) – am thinking maybe I need to catch up with where I let off…yes – wedging out in front of the telly is most definitely one of my favorite parts of the holidays!
Eh, SVU isn’t nearly as good now that Stabler is gone. Cragen and Munch have also moved on. The newer characters are still good…but it’s just not quite the same. I’d still suggest catching up over the holidays, though! I hear the reruns go well with sweet potato pancakes.

They moved Olivia into Cragen’s role. I was really hoping they would bring in some superstar actor…but nope. Olivia is ok there, but she was pretty much the only one left of the original cast. Well, Olivia and Finn. And Finn would’ve been a terrible captain!

Mike – Friday Night Lights is now one of my all time favorite shows – wait – IT is my ONLY all time favorite television show – I don’t believe it only lasted 5 seasons!!! So many possibilities and questions… I mean do Tim and Tara get back together? does Lyla come back? Does Tim build on his land? What about Landry? Smash? How does Coach do in his new job? What about his youngest? What happens to Buddy? Matt & Julie?
Only problem with Friday Night Lights is it’s hard finding something to get hoked on after watching it!

Binge watching TV=my fav. I’m currently making my way through Mad Men and loving it! One thing I love but could do without until I have it are pancakes!! I rarely make them but die of happiness the times when I do have them.
I blame the cold weather – I think it’s the reason I wanna stay indoors and WEDGE OUT!
If only someone would invent an automatic pancake maker – right? Wait – don’t tell me if someone did and I missed THAT bandwagon too!
