Spinach Banana Pancakes
Start your morning with a hefty dose of these greens and protein-packed, Spinach Banana Pancakes! They are absolutely delicious with a cup of coffee or tea.
These spinach and banana-filled, Spinach Banana Pancakes are thin and fluffy. They are the perfect breakfast to linger over on a Saturday morning. I could go on about how delicious these are, but I would so love for you to make them and find out for yourself.
What are the ingredients needed to make these Spinach Banana Pancakes?
You will need the following 7 ingredients:
- 1 cup Isopure Protein Powder
- 1/2 cup brown rice flour
- 2 teaspoons baking powder
- 2 cups spinach
- 1 banana
- 1 egg
- 1 cup milk
When it comes to smoothies – are you a chugger? Or, a sipper?
Quick, tasty, portable, veggie and fruit packed, green smoothies are a favorite of mine when temperatures start getting warmer. They are also a favorite of mine when I need some balance on days filled with chocolate cake with peanut butter icing! And, provided the smoothie isn’t brain-freezing-cold, I can make my favorite smoothie disappear in 0 to 52 seconds. I know…I know…you want to time your chugging speed, right? Go ahead, I will wait…so, how did you do?
Somedays, I love that I can chug my smoothie down so quickly.
But, every now and then, I like to savor it, to linger and laze around, while sipping on it.
But, unlike finely aged cheese, my green smoothies do not get better with time. In fact, after a couple of hours, they have more in common with a cup of day old, cold (not iced) coffee.
So, every now and then, on days when I want to linger over my smoothie, I turn it into a pancake. Of course, I add a little bit of rice flour or gluten-free oat flour, an egg, and some baking powder to help the smoothie transition better into a pancake – but the base ingredients (spinach, banana, milk, and protein powder) remain the same.
I have been trying different protein powders recently, and for these pancakes, I used a whole cup of unflavored Isopure Whey Protein Isolate, which is one of many protein powders I like to use.
This Isopure Zero Carb powder packs 50 grams (per 2-scoop serving) of 100% pure whey protein isolate, without a carb in sight! And it still comes with glutamine, vitamins, minerals and nutrients to keep your muscles tough, lean and ready to rock it. The microfiltration process used to create Isopure is so complete that it is the only completely clear milk protein when it is dissolved in water. Ingredients
- 1 cup Isopure Protein Powder
- 1/2 cup brown rice flour
- 2 teaspoons baking powder
- 2 cups spinach
- 1 banana
- 1 egg
- 1 cup milk
Instructions
- Place all the ingredients in a blender and pulse till well incorporated
- Pour about 4-5 tablespoons of batter into a greased pan on a low-medium flame (the flame need to be low enough so the pancakes don’t burn but still cook -might take a sacrificed pancake or two at first)
- Let pancake cook for 3-4 minutes and flip and let cook another 2-3 minutes
- Repeat with the rest of the batter
- Top with bananas, strawberries, syrup or any toppings you desire.

This might be my favorite, most practical recipe of yours to date! I like throwing spinach in my smoothies sometime, but having them in pancakes (LOVE pancakes!) then that’s just the best. Oh I’m definitely a smootie chugger.

In the little town of Whuzzfuzzle (or was it Fuzzwhuzzle?), there lived the greatest of things. A little young Fuzzle who stood out from the rest. She’s wasn’t tall. She wasn’t short. But she was admired by all who drove their Wuzzmobiles for miles to see her. What was her skill, you ask? Well she was the greatest flip flipper the town had ever seen. Ok, that was enough early morning rhyming for me. I clearly need more coffee. Speaking of coffee, whenever Laura and I go on roadtrips we take along coffee in an insulated mug and also a really thick smoothie in an insulated mug. We sip on the smoothie as it melts and then switch over to coffee. And then we’re ready for a pit stop after like an hour. 😉 These pancakes look awesome, Shashi! Well done on the creative twist here!

WOW. I just had to click over when I saw this title–seriously! I used to think I was just a sipper, but I guess I’d be a pancaker right about now.
