By George, I think I finally figured out how to not have to cut my grass every week…
I am not sure why I never thought of this before…but, 10 days ago, I discovered …(drum roll please)…the lowest setting on my lawnmower!
Some people have told me that it’s not good to cut it down so low, but, y’all – ten days of not having to chase my pushmower around my yard is reason to celebrate! Preferably – with chocolate!
You see, I have a large, hilly, yard; and, constantly cutting it and weed eating it turns into quite the workout. While most times this is a good thing, being outside in the heat for long periods really kills my appetite for the rest of the day! Does the heat have that effect on you too? While I might go to bed not hungry; the next day, I tend to wake up ravenous!
And mornings -after evenings filled with yardwork- demand pancakes!
And, not just any pancakes, mind you – but Triple Chocolate Oatmeal Pancakes! Pancakes that will not feed your appetite, but, also feed your soul!
Recently when I was at Target, I came across Brookside‘s new assortment of chocolate bars in 4 flavors: Blueberry & Cranberry Almond, Cranberry Almond, Mango Coconut and Summer Berry. I also found pouches of Brookside‘s new Dark Chocolate covered Almonds, Dark Chocolate Blueberries, and, Milk Chocolate covered Almonds. I ended up grabbing a Mango Coconut bar and a Dark Chocolate covered Almonds pouch and headed home thinking I would snack on them that evening. All of these new Brookside flavors are available exclusively at Target.
Of course, this happened to be the evening I chose to cut the grass and so those chocolates lay on my counter untouched! Even my daughter came home after working a double shift and we both just sat and napped on the couch – clearly, we live on the wild side!
But, when morning came, we had the brilliant idea to make oatmeal pancakes with cocoa AND chopped up pieces of the Mango Coconut Chocolate Bar AND pieces of dark chocolate-covered almonds!
We set about making our triple chocolate oatmeal pancakes by:
•1• Grinding up 1 cup of quick cooking, Gluten Free Oats in a blender
•2• Then adding 1 tablespoon baking powder, a dash of salt and 2 tablespoons cocoa to it
•3• We then added in ¾ cup milk, an egg and 1 teaspoon vanilla and 1/2 a bar of Brookside’s Mango Coconut and a handful of Brookside’s dark chocolate covered almonds
•4• After all the ingredients were well incorporated, I ladled 2-3 spoonfuls of it into a greased pan on medium heat, and cooked each pancake 2-3 minutes on each side.
•5• We topped our pancakes with non dairy whipped topping and the rest of the bar of chocolate and some dark chocolate covered almonds.
Now these amounts can be doubled or tripled so that there’s enough to share with family and friends who happen to drop by unannounced for breakfast – or, maybe you could get them all involved in sprucing up your yard – maybe then their appetites will be shot and you won’t have to share…hmmm…wishful thinking…

- We topped our pancakes with non-dairy whipped topping, chocolate syrup, and the rest of the bar of chocolate and some dark chocolate-covered almonds. You can also add fruit and syrup – if you prefer.
I saw ‘triple chocolate’ and I was sold immediately!!
I’ve never made pancakes with ground oatmeal before, but what a GREAT idea! I especially love the choc covered mango on the top … oh wow, you’re really making me hungry!
Haha – that’s me too – if I see triple or double preceding the word chocolate – am in! Helen – if you want, you could use “oat flour” – i take the budget friendly route and grind up oats – btw – thanks so much! xx
Oh yard work! We don’t have that big of a yard (and it’s flat) so thankfully it’s not too much! But I’ll still happily eat a big stack of these pancakes after cutting the grass! haha Not that I should talk, that’s usually the husband’s job (I just water my little herb garden lol).
Haha Ashley, I don’t have one of those, so grass cutting is my job – but – I wouldn’t mind trading your flat lawn for my hilly one – I’ll even throw a couple of stacks of these pancakes into the deal…?? 🙂
I live in an apartment so no lawn mowing for me, hehe! These pancakes look delightfully sinful! A perfect treat for post-lawn mowing, I think 😉
Haha – hey – if you ever wanna experience the “joys” of grass cutting, Genevive you are always welcome over 😉
ok, I didn’t even know there were settings on lawnmowers!!! 😛 can you tell my hubby cuts the grass?! ok, this is chocolate overload of the best kind!!! wow! pass me some triple-chocolate-oatmeal-pancakes pleeaseeeeeee!!!
Alice, I learned about the settings the hard way – by trial and error! 🙂
Thanks Btw 🙂
Those look like my kind of pancakes! Love the dark chocolate almond topping. I’d love to wake up to a stack of these 🙂
Chocolate makes everything better right? Thanks June! 🙂
If I ate this for breakfast, i’d be done for the day! :p buttttt dessssert, now I’m in! Or you could just give me all that chocolate in the fourth photo and I’d be a happy girl too haha 🙂 #chocolateforever
I couldn’t say it any better – #chocolateforever INDEED!!! 🙂
Thanks so much Sarah
I thought you would post those green pancakes today. Totally disappointed. But I’ve forgiven you thought, Shashi! I mean how could I not forgive your for these gorgeous bad guys?! I’ve made a lot of oatmeal and chocolate pancakes but separately – never combined them together! Well done!
Oh Ben, I am so sorry – I thought I mentioned on Instagram that those Green Smoothie Cupcakes were coming out on 8-17 – maybe I forgot… but I am so glad these made you forgive me! 🙂
How lovely to have a break from all that mowing! I remember you telling me how big your yard is so it must take you some time to mow. The presentation of your pancakes is gorgeous. I do love how pretty they are with the chocolate nuts xx
Charlie you are such a dear for remembering the size of my yard! My daughter and I joke about selling our place and getting a small condo just so there’s no yard!
BTW – Thanks so much!
Oh my goodness, I’m loving these amazing pancakes! You definitely raised the bar on breakfast Shashi!
Thanks so much Chris! 🙂
Yay for pancakes! 😀 I still utterly fail at making them, but that is a-okay. One can dream, and…practice makes perfect! These look amazing! <3
YES – practice makes perfect!!!! Farrah – I’ve been practicing for along long while – my beginning pancakes would always fold on me rather than flip!?!?!
Thanks so much, BTW!
These look absolutely yummy! You could definitely get me to mow the lawn if I could have those as a reward!
Haha – Thanks so much Shannyn – now that’s an offer I couldn’t refuse 🙂
Sounds like your pancakes are very well deserved! They look delicious!
Thanks so much Rachel!

Thanks so much!
Oh! You should have asked me – I could give you MY tip for easy lawn mowing….OUT SOURCE!!! But hey – good exercise, no? You NEED these pancakes to fuel you!! Pinning!
Haha! Nagi I like your advice – and, if I cannot do it, then I “OUTSOURCE” -like I won’t mess with any electrical or plumbing repairs, but pushing a lawnmower is good exercise – besides I have a 70 year old neighbor a couple houses down who cuts her own grass! Talk about inspiring huh!?
OMG Shashi, this just looks too good. I imagine triple chocolate also means three times as tasty. Oh dear, I just scrolled up to stare at them again, lol.
Awesome recipe!
Thanks so much Howie – haha – you know triple chocolate definitely means more tasty because -well – CHOCOLATE!!! 🙂
Pancakes are perfect after a lot of yard work. I’d love to start my day with this gorgeous stack! Love all that chocolatey goodness!
Thanks so much Kelly! 🙂
