Beet Bars
Moist, light, and studded with white chocolate chips, these decadent Beet Bars are gluten free and can be enjoyed as a breakfast treat or a snack or a dessert.

So, what would you do if you won the lottery?
Let’s day dream for a little now…
Would you quit your job?
Buy a new home? A new car?
Travel the world?
Sit around and eat beetroot in all it’s glorious forms: all-day? everyday? 😉

When we were younger, my dad used to love to ask my sister and I what we would do if we won…
Then when it was his turn, he would rattle off all the things we had listed – saying his answer lay in helping us get what we wanted and be where we longed to be…
In those earlier years, my day dreams revolved around a new car, a home for my parents, travelling to see my friends and family scattered around 4 continents…these days though, my answer to that question isn’t quite the same…these days my answers revolve more around my daughter’s needs and my mom’s and sister wish-fors.
But, there is one thing constant – one thing that I had wanted to do when my dad first asked me this question and now, as I ruminate on it myself-and that would be to quit my full time gig.
So last night when I came across this amazing lady – who won $11 million in a lottery with her husband – and heard of her plans to stay working and serving at her job – well, to say my mind was blown is putting it mildly!
So, I might quit my day job, but I think I will keep my night one – this blogging thingie – after all it’s an excuse to eat glorious beetroot in a smorgasbord of ways!

I tried a couple of versions of these beet bars – the first one, I did not use enough agave and it seemed that the salt was kinda off (like how technical I can get in my descriptions?) and my daughter gave me her “squinchy” face at first bite -YIKES! But the second time around, I used raw cane sugar and more salt and more chocolate chips and peanut butter chips (which can be substituted with butterscotch chips – if you prefer)…

And…I had to start rationing…while negotiating…
My daughter (while I was trying to take these pictures and when she knew I would be distracted): “Mom – can I have another one”…
Me: “can or may…”
My Daughter: eye-roll (Whhaaat!!! Why do kids think just because you have your back to them, you have no clue what their body language is saying???)
Me: “You’ve had two – we need to save them for breakfast for the rest of the week”
My daughter: “How bout I help you weed the front yard?”
Me: “What does that have to do with the amount of leftovers we have?”
My daughter: “that will cut the time you spend on yard work in half, leaving you more time to go buy more beets and make another batch of these…”
And that’s when I didn’t have a come back as I was marveling at her application of math to real life and the fact that she was trying to talk me into buying more beets!

These Beet Bars are totally gluten free and can be enjoyed as a breakfast treat or a snack or a dessert (or like my daughter tried to tell me) at breakfast, and as a snack and as a dessert – all in one day!

Do you think almond flour would work rather then rice?
Hi Shashi! these photos are gorgeous!
I’d love to include your Beet Bars recipe in a beetroot roundup I’m doing for Parade Magazine. If you’re fine with that, could I use one of your photos with a link back to your original post (http://savoryspin.com/2014/09/17/beet-bars/)?
Let me know, thanks!
Thanks so much Rose! Yes! I would be so honored to be included with links back to my original. Thanks again
Hi Shashi!
Just wanted to let you know that the Beetroot round up is now live here:(http://communitytable.parade.com/438820/felicialim/the-8-best-beetroot-recipes-ever/)
Would love for you to share it with your followers as it’s getting pretty good response!
Thanks so much for letting me include your recipe once again!
Just wondering how much salt you ended up using as it doesn’t seem to be included in the ingredients list.
Thanks so much for noticing Ally – I used 1/2 teaspoon – I have corrected the recipe.
Oh Shasi, I’ve heard of chocolate with beetroot, but not beetroot with chocolate. These look amazing, I’m so intrigued at how they will taste.
Looks great a must try!!!
Thanks so much!
I think your daughter won that battle! Girl makes a point! These bars sound wonderful! Sweet while still being healthy at the same time! I guess I need to re-think the beet! Pinned
Haha – I guess she did! Yes, yes you definitely need NEED to rethink THE BEET!!! 🙂
I adore beets. Absolutely love the vibrant bars, Shashi. Loved the conversation between you and your daughter. It’s amazing how these little people try to convince us moms! I had a similar conversation with my 3 year old about some cupcakes she helped to make 🙂
Haha – “these little people” sometimes do have pretty amazing powers of convincing!
Thanks so much Lail!
Good for you for moving forward! Thanks for sharing the story about your dad, and these photos are beautiful!
Thanks so very much Erin
These pictures are seriously gorgeous! They look just like red velvet bars!
Thanks so much Christin!
I just found your blog through Running with Spoons – love it! And love these beet bars 🙂 So gorgeous. I’ve always said if I win the lottery, I will quit my job and start working at the coffee shop again. It was my college job and I loved every minute!
Thanks so much Sam – and I love your’s – awesome motivating tips today! Thanks so much for stopping by and commenting – hope to see you round here soon…
I might try some gluten free food soon. The bars look divine! Like you, If I won a lottery I’d probably quit my job. Just because I’d love to be free and travel the world.
Thanks so much Daniela – am so with you on the travel bit!
I love beets, but more than beets I love anything that resembles red velvet cake. This recipe looks amazing!
Thank so much Shelly – this did come out better than I thought! Thanks so much for stopping by and commenting
Hahaha! I love that your daughter was trying to convince you to let her eat more beets. That’s impressive, Shashi! If I won the lottery, I would definitely want to do some more traveling. I’d probably also want to move down to the NC mountains. I love mountains and chilly weather, but it’s just too darned cold way up here in NY. I’d definitely still keep blogging, though. I love having a reason to make all sorts of new recipes, and I love all the awesome people I’ve met, too. (ahem, like you!)
David – you won’t believe what she did tonight – she was writing down a grocery list and she put down beets and underlined them!!! Yes!!! All those years of stuffing disguised beets down her throat have paid off!!! Parental food victories are the best!!!
Awww – thanks my friend – I feel the same way bout peeps I have met through Blogdom – you know your are one! If y’all moved to NC -we would practically be neighbors – I will drive 5+ hours for cake! 🙂
Not another beet recipe! You know I’m allergic 😉 I don’t think I would quit my job if I won the lottery, either. I love what I do and I’m definitely not in it for the money.
I know – am sorry – please feel free to ignore my beet posts – or you could sub beets with chocolate? or peanut butter…ooh…now am hungry!
OMG I want to buy some beetroot to make some of these right now! 😮
I hope you do – and I hope you love ’em as much as we did – thanks Lorraine
