Easy Greek Yogurt Pancakes

Ever so tenderly spiced with cinnamon, cardamom, and ginger, these easy Greek Yogurt Pancakes are made with my favorite Greek yogurt: FAGE! Not only are these nutritious, but they’re some of the fluffiest Greek yogurt pancakes I’ve ever had.

One thing on my bucket list for some time has been to live and work in rainy Seattle, WA for at least a year. With all the rain we have been having down here in Athens, GA, it almost feels like I can cross this off my list!

I’m not complaining about the rainy days though because they help me appreciate the sunny ones oh-so-much more. And, those rainy days mean more time for breakfasts like these gluten-free Greek Yogurt Pancakes ft FAGE Total.

Ingredients To make yogurt pancakes

These Greek Yogurt Pancakes are made with my favorite Greek yogurt: FAGE! In the past, I have used FAGE Total 5% Plain Greek yogurt  to make these hearty Pumpkin Yogurt Pancakes.

Not only are these nutritious, but they’re some of the fluffiest Greek yogurt pancakes I’ve ever had.

Deliciously rich and creamy and protein-rich, FAGE Total offers 3 different milk fat varieties – 0%, 2% and 5%. Each of these are available in containers ranging from 6oz to 35.3oz. Calcium-rich, FAGE Total Greek yogurt is Non-GMO Project Verified and has no added sugar.

I like using FAGE Total 5%  but you can choose the % that best fits your lifestyle. The rich and creamy texture is hard to beat! 

Usually, during the work week, I like to indulge in a quick breakfast of FAGE Total Greek Yogurt, honey, Apple Walnut Granola or Cranberry Coconut Granola and a huge cup (or two) of coffee. When I don’t have time to sit down for breakfast in the morning, I grab a strawberry FAGE TruBlend or a FAGE Total 5% Split Cup to eat on the go.

But, when I have extra time on the weekend, I like to whip up a large batch of these fluffy, gluten-free, easy Greek Yogurt Pancakes. Sometimes I make an extra batch, so I have a few to enjoy on Monday morning as well.

Ever so tenderly spiced with cinnamon, cardamom, and ginger, these Greek Yogurt Pancakes are light and fluffy and oh so tasty!

I combined a gluten-free flour blend and some almond flour to make these gluten-free. However, if gluten is your friend, you can substitute all purpose flour for the gluten-free flour + almond flour combo.

I made these Greek Yogurt Pancakes by mixing the dry ingredients in a bowl and then adding in the wet ingredients (the water, egg, and FAGE Total Greek yogurt.)

The batter will be quite thick. But, don’t be tempted to thin it out. If you add more water than the ½ cup I did, your pancakes will be more on the thin side than on the fluffy side.

The number of ingredients I have listed here made 4 medium pancakes. You can double or triple the recipe to make more.

I love smothering these pancakes with a Greek Yogurt Topping (also made with FAGE Total) a smidge of cinnamon and some maple syrup.

Most times, this Greek Yogurt Topping leaves me feeling better than a whipped cream topping does so that’s why I like to use it instead. I also chopped up a bunch of mangoes, kiwi, and strawberries to throw on top.

Easy Greek Yogurt Pancakes Recipe

Ever so tenderly spiced with cinnamon, cardamom, and ginger, these fluffy, easy Greek Yogurt Pancakes are made with my favorite Greek yogurt: FAGE!

Ingredients

  • Oil to grease the pan
  • ¼ cup almond flour
  • ¾ cup gluten-free flour blend
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • tsp salt
  • 1 tsp cinnamon
  • ¼ tsp ginger
  • ¼ tsp cardamom
  • 1 egg
  • 1 cup FAGE Total 5% Plain Greek Yogurt or your preferred %
  • ½ cup water

Instructions

  • Add the GF flour, almond flour, baking powder, baking soda, salt, cinnamon, cardamom, ginger, and sugar to a bowl and mix well.
  • Then add in the egg, water and FAGE Total Plain Greek Yogurt and gently fold in with a spoon.
  • Grease a frying pan with oil and place it over a medium heat stove-top.
  • Add 3-4 tablespoons of the batter onto the pan and let cook for 2-4 minutes on each side. Just remember that each stove-top is different and hence the pancakes will either cook fast or slow depending on stove-tops and environmental conditions. 
  •  Flip pancake and cook for 2-4 minutes on the other side as well.
  • When all pancakes are done (should have 4), top pancakes with Greek Yogurt topping made with ½ cup FAGE Total 5% Plain, ½ tsp cinnamon and 1 tbsp maple syrup. Also add fruits that you like and enjoy!

    Oh man, this recipe is calling my name, Shashi! Talk about the perfect weekend breakfast. We like to eat a little bit heartier breakfasts on the weekend, too, and these pancakes might just need to happen here tomorrow!     One of my pet peeves with pancakes is that they are always so heavy. So imagine my surprise when I made these and they were just as fluffy as your photos! Not only that, they were absolutely delicious especially topped with fresh Georgia peaches.
