  1. Pistachios <3
My mom always had me and my brother text her when we got to our destination. Even just driving to school senior year of high school, we would have to send her a text once we got there. Even if it just said "k", it gave her the greatest peace of mind!

  2. These cookies would be a huge hit at our home, Shashi. My husband is a loyal fan of white chocolate and who doesn’t love pistachios? These are surely a winner.

  3. haha Shashi you always make me laugh! And these cookies look fantastic! Pistachios are one of my very favorites and I love them in baked goodies!

    1. Hahaha! I need to take notes and try pretending I am a pioneer next time – though I don’t see it working for more than 5 seconds – then I’ll be off to go get my phone! Sad eh?! 🙂

  4. Hahaha…I’m totally calling you Winona Rubbadubber from now on! Lil Shashi is lucky to have such an awesome parah-noid. 🙂 Hmmm, if I got somewhere and didn’t have my phone? At first, I would freak out thinking that I had lost it. Then (assuming I remembered I left it at home) I would probably just go about my day even though it would bother me to no end that I didn’t have my phone in my pocket. Isn’t it funny (and sad) how addicted we are to our smart phones now?? Speaking of addicted, I think I need some of these cookies in my kitchen. Like today. These look awesome, Winona!

    1. I cannot wait to see what Lil Spiced is gonna call you when he has his own set of Rubbadubbers! Yes – you bet I will be sending one over via FedEx so we don’t have to worry about that mail-lady or faulty drones! 🙂

I wish I could make it a day without my phone – with Lil Shashi driving and all, I’d go nuts if I didn’t have it! Funny and sad it most definitely may be – but I am definitely no Winona!

  5. I think your daughter is going to be juuusssttt fine. Single parenting and all. 😛 These cookies are GORGEOUS! I am obsessed with all things pistachio and absolutely NEED THESE.

    1. Thanks so much Joanne! I love pistachios too – have you been to Fabiane’s Cafe & Pastry Shop in Brooklyn? They have THE BEST pistachio cake I’ve tasted – wash that down with an iced coffee of theirs and ooh – heaven in ma belly! 🙂

      1. Hi I used pistachios in the shell, which I had on hand. They turned out just a bit under a cup and a half….but, unlike yours,no green whatsoever! I was disappointed that they look more like ordinary chocolate chip( I didn’t have white chocolate,so I used regular;also added dried sour cherries)….they taste AMAZING!!!

      2. Hi Suzee- thanks so much for letting me know – I am sorry about the color – I have experienced the same depending on the batch of pistachios – but I am so glad you liked the taste – love your idea of adding in sour cherries!
        Happy New Year!

  6. My oldest son went to private school and he used to be so good about calling me when he was on his way home…it gave me such peace of mind! I don’t know what I’d do if I forgot my phone…that’s such a interesting question. It’s funny how I didn’t even have one for years and years and now I feel like I am missing something if it is not with me. I think I could use a day without my phone. 🙂

Anyway…your pistachio cookies look yummy! I could definitely go for a couple of those, even if it is breakfast time!

    1. Thanks so much Michelle! You know what – my daughter and I munched on these for breakfast one day – they are not too unhealthy and all those nuts kept us full till past lunch!
I think I need a day without my phone too (as long as my daughter is with me so I am not worried about her) it sure would be nice to totally unplug!

  7. hahaha, parah-noid–thta’s so cute! :] My parents were the same way, so much so that they actually talked me out of getting a license until after I graduated from college. x_x I pretty much walked everywhere until I was 22.5, haha.

Those pistachio cookies look delicious! I want em’! <3

    1. Thanks so much Farrah – I remember you mentioning that you waited till after college – I did too – but for me it was because it was either a car or college and well – college sounded like a better deal in the long run 🙂

  8. Hahaha, “you know, parah-noid; a parent being annoying!” Loved this. 🙂 But I must say you are the most loving Mom, Shashi! 🙂 And these vibrant green cookies are just AWESOME. Loving this. I wish I could have at least 5-6 or maybe 10 cookies right away. 🙂

  9. I wrote a really long comment on your previous post, the cheesecake, but then my internet crashed and my comment vaporised. I was saying how beautiful the cheesecake is and how I love a cashew cream cheesecake. And it was such a pretty colour. I was also replying to your question about whether we’ll be visiting Sri Lanka on our trip to India but unfortunately we’ll just be seeing Northern India on this tour. I do hope to make it to Sri Lanka one day. And your cookies are such a pretty colour and I think you’re an amazing single mom and it’s so lovely your daughter calls you often – mine calls me all the time too! xx

    1. Thanks so much Charlie – I actually was hoping that cheesecake turned out brighter – but, I guess I should have used beets eh? 🙂

I hope you enjoy North India – I used to have friends from there when I was in high school. And I also hope you get to go to Sri Lanka – it is one heck of a beautiful island – and I am not just saying that 🙂
      xx
