Mocha Breakfast Cookies {Gluten Free}
Made with just 9 ingredients, these gluten-free Mocha Breakfast Cookies are delicious and nutritious! They are great for breakfast or as a snack when you need a pick-me-up!
“What 3 foods would you chose to have with you if you were stuck on a tropical island?”…is a question that came up when my daughter and I were trying to mentally escape the frigid temperatures Atlanta had last week.
Just as I was starting to buy into the whole Atlanta’s-groundhog-didn’t-see-his-shadow-forecast-of-early spring-dealio, we got hit with some of the coldest temperatures of the season – complete with ice storms and power outages and trees down.
I am so grateful we don’t have layer upon layer of snow, but when temperatures dip into the negatives, my daughter and
I start speculating about being somewhere warm…and it was during one such conversation that this question came up. Of course, the island we are stranded on miraculously has a stove and oven!
My daughter thought long and hard and concluded that her 3 foods would be •1• Potatoes, •2• Broccoli, and •3• Dog Food {she mumbled something about it being complete nutrition and what not – but I am totally befuddled at that last one}.
As much as I love ALL food, I think my 3 top picks – would be •1• Chocolate, •2• Oats, and •3• Coffee.
Whether it be oatmeal with chocolate washed down with coffee, or oats cooked in coffee with chocolate {for those mornings where an extra dose of caffeine is a must}, or cookies such as these Mocha Breakfast Cookies – with chocolate and oats and coffee all in one; chocolate, oats, and coffee tend to be a part of my everyday food choices!
So, this month, when The Recipe Redux challenged members to share our favorite chocolate matches, I figured I would share my most popular chocolate combination. Just about every other week or so, I make Breakfast Cookies with oats and chocolate – sometimes they have Hemp, sometimes they have Beets, but most times, they have coffee in them for an added ZING!
I am a chocoholic and even though I enjoy chocolate in this Savory Soup and in this Sweet Soup, as well as with Lentils in these Pancakes; my favorite way to enjoy chocolate is matched up with oats and coffee in these simple Mocha Breakfast Cookies!
What are the ingredients to make these mocha breakfast cookies?
These mocha breakfast cookies are made with only 9 ingredients and they are:
- Rolled oats ground
- Baking powder
- Cocoa
- Brown sugar
- Instant coffee
- Eggs
- Almond oil or avocado oil
- Dark or semi sweet chocolate chips
- Hemp seeds, optional
Now, these cookies can be dipped in more chocolate and sprinkled with hemp to make them into a truly decadent but still good for you – Mocha Dessert Cookie – but, how you chose to enjoy them – well, that’s up to you!

Ingredients
- 2 cups GF oats ground I ground my oats using my blender
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup cocoa
- 1/2 cup brown sugar
- 3 teaspoons instant coffee
- 2 eggs
- 4 tablespoons almond oil
- 3/4 cup dark or semi sweet chocolate chips
- 1/2 cup dark chocolate chips melted optional
- 2 teaspoons hemp seeds optional
Instructions
- Preheat oven to 350
- In a large bowl, add in all the dry ingredients – the oats, salt, baking powder, cocoa, brown sugar, and coffee and mix well
- Make a well in the middle and add the eggs and almond oil and mix till the mixture resembles dough
- Add in the chocolate chips
- Break off tablespoon-sized pieces of dough and roll them into circular cookies
- Bake for 15 minutes
- When cooled, dip in melted chocolate and sprinkle with hemp – but this is optional

As tempting as it would be to select dog food, I think I have to go with your choices here. Coffee is a must. So is chocolate. Except I might go with cinnamon for my 3rd choice…although cinnamon isn’t so hot just by itself. Maybe pineapple instead. Yes, pineapple!
I don’t have any explanation for the dog food – it blows my mind and churns my stomach when she throws a couple pieces in her mouth – just to make me squeam!

Uff someone ate my comment so let me try again! You know I’m a big fan of the coffee/chocolate combo so i am all over these cookies. Would I be able to count them as 1 of my 3 foods for the island?? That’s a good question though…and a difficult one to say the least! I’m thinking I should add something savoury to the mix- too much sweet doesn’t fare well with me!

Kim – in my hypothetical situation – the dogs stayed home! We have 2 big ones and they would eat ALL our food if they were stranded with us! GAH!
