  1. That is just beautiful. And tasty. Bacon, potatoes, and avocados all together. I’d add a little cayenne pepper flakes as well, but that’s just me.

  3. The Oregon coast is amazing, isn’t it? So many hiking trails along it! And SO PRETTY! Anyway, this is a wonderful salad. Healthy and tasty. Perfect picnic fare. So perfect for the 4th! Speaking of which, Happy 4th!

  5. Yep, I’m all for oven baking bacon too Shashi. Don’t you just hate cleaning that grill? And this is definitely a great recipe for fuel for hiking. I can imagine Lynne and I taking little containers of this with us in our back packs as we go adventuring. This for this recipe Shashi and hope you get out on lots more hiking adventures. Covering 18 – 20 miles per day sure is good going!

  6. Oven baking bacon is definitely the way to go! The strips get perfectly crisp and no splatter anywhere! Loves me some potato salad and this one is definitely a delicious one to pack for a picnic. Nice touch with the avocado…bet it adds such a lovely creaminess!   7. I grew up in Oregon so I know the coast well–the thing I like best about it is that it’s never too hot so you can hike all day without fear of heat stroke :). This salad sounds AHHH-mazing! I love potato salad probably more than I should. Is there anything better though? Love the twist using avocado!

  8. Potato salads are one of the best things about summer barbecues! I mean I love whatever comes off the grill, but the side dishes aren’t far behind…and you better believe I’ll always stop at the potato salad first! The avocado in this one is a fun twist. We’re heading off to Laura’s family’s summer reunion soon, and we’ve been tasked with bringing potato salad. I might just have to use this recipe…with extra bacon of course! 🙂 Yum!

  9. wow I bet this salad is over the top fabulous and sure looks creamy with avocado, which are my favorite. I think I would love this also around Christmas its pretty festive looking and perfect f or Florida weather all year!
