  1. I made this, but with pomegranate arils instead of sun dried tomatoes. I started off making the recipe as given, but thought that a bit of tartness would be good.
    I used the juice from the bottled pomegranate (not as good as fresh) and made a version of the pepper jelly. Was great! My wife is diabetic so had to make a sugar free jelly on the fly with stevia and corn starch and the juice from the pomegranate with chili powder.

    Thanks for a great recipe (even if I modified it a bit). A bit more sweet and tart instead of savory, but very nice indeed.

  2. I have a love/hate relationship with tofu. Sometimes I have it and it tastes amazing, but whenever I try to cook it myself I end up with this bland, stolid mass which is just horrible. I must be failing somehow but I’ve followed so many different recipes!

    This looks really great at least – very colourful Shashi! I’m surprised you said it was “budget friendly” though. I’ve always found it to be a fair bit on the pricey side, but perhaps that’s just in Europe?!

  3. I need to be more creative. I only use tofu for Asian style dishes, but I really, REALLY love that you used my favorite sun dried tomato to cook tofu! That totally opened my eyes! I’m actually quite excited about this combination. 🙂

  4. Funny that you had this experience with the plumber because you were just writing about the good people in this world when you told us about the story you’d heard on TV! That guy sounds like a GOOD man. I’m glad the problem was nothing and that now you know how to do all sorts of other things around the house! Plus your tofu looks delicious. I really am going to try it one of these days.

  5. That plumber is a saint! What a guy. I hope his business is blessed beyond measure. He could have taken advantage, but he didn’t. And yes, tofu; I’ve always found it bland but not in a recipe like yours! xx
