Tofu Hash with Sundried Tomatoes
During my college years, budget friendly tofu kept me from entering into “starving-student-artist” status..
I baked it, broiled it, boiled it, grilled it, cubed it, sliced it, grated it…
Not only was it one of my main protein sources, but I just plain loved it!
And, through the years, I haven’t stopped experimenting with it.
This Tofu Hash with Sundried Tomatoes was the result of such experimentation.
The sundried tomatoes so enhanced the pepper jellied tofu and potatoes.
And yall, it was SO GOOD!
SO GOOD, we ended up licking scraping the pan clean, finishing of 4 servings in 2!
Speaking of good, I usually share stories from local or national news articles that reaffirm mankind’s goodness
But today, I want to share a personal story.
One day last week, I came home to find a mini flood in my kitchen, first I thought one of my dogs mistook the indoors for the outdoors, but, later I realized that the water was coming from under my sink.
With the frigid temps we have been having, I really was not too thrilled to think about the logical cause…
But, when Mr. Vic Robinson (a plumber who I had crossed paths with previously) showed up, he informed me that the water leak was because of a loose valve, (not a busted pipe like I thought) which he tightened. He then proceeded to show me how to change the flapper on my toilets – and how to check the water meter to see if I really had a leaking pipe somewhere.
When I asked him how much I owed him, he told me he could not look me in the eye and charge me for work he did not do. He would not even let me pay him for his gas as he said his next job was 2 miles from my home.
Good people are such a big blessing…bigger than they ever realize.

Ingredients
- 1 red onion and 1 yellow onion chopped
- 1 inch piece of ginger chopped
- 1 inch piece of fresh turmeric chopped
- 5 cloves garlic chopped
- 2 celery stalks chopped
- 1 block extra firm tofu
- 1 potato cubed
- 8 pieces of sundried tomato chopped
- Paprika
- 3 teaspoons pepper jelly I used Trader Joes
- Salt and pepper
- Fresh cilantro to garnish
- Olive oil
Instructions
- Place the cubed potato in a microwave safe bowl and microwave for 4-5 minutes
- Then saute onions, garlic, turmeric and ginger in a pan coated with olive oil for 15-20 minutes till onions caramelize
- Add in the celery
- Using paper towels dry the tofu and then cube it, adding the cubed tofu to the onion mix
- Add in the potatoes
- Then add in the pepper jelly, paprika, salt and pepper and sundried tomatoes
- Stir till heated through, garnish with cilantro and face plant into!
I made this, but with pomegranate arils instead of sun dried tomatoes. I started off making the recipe as given, but thought that a bit of tartness would be good.
I used the juice from the bottled pomegranate (not as good as fresh) and made a version of the pepper jelly. Was great! My wife is diabetic so had to make a sugar free jelly on the fly with stevia and corn starch and the juice from the pomegranate with chili powder.
Thanks for a great recipe (even if I modified it a bit). A bit more sweet and tart instead of savory, but very nice indeed.
I have a love/hate relationship with tofu. Sometimes I have it and it tastes amazing, but whenever I try to cook it myself I end up with this bland, stolid mass which is just horrible. I must be failing somehow but I’ve followed so many different recipes!
This looks really great at least – very colourful Shashi! I’m surprised you said it was “budget friendly” though. I’ve always found it to be a fair bit on the pricey side, but perhaps that’s just in Europe?!

I need to be more creative. I only use tofu for Asian style dishes, but I really, REALLY love that you used my favorite sun dried tomato to cook tofu! That totally opened my eyes! I’m actually quite excited about this combination. 🙂

Funny that you had this experience with the plumber because you were just writing about the good people in this world when you told us about the story you’d heard on TV! That guy sounds like a GOOD man. I’m glad the problem was nothing and that now you know how to do all sorts of other things around the house! Plus your tofu looks delicious. I really am going to try it one of these days.
I’ve still never tried tofu. Actually it sounds a little scary but if you prepared if for me with these delicious tomatoes I’m sure I’d eat it. Looks great!

What an awesome plumber! They are hard to find. I absolutely love Pepper Jelly. Always trying to think of new ways to use it. I am sure it tastes wonderful as a flavoring for tofu!
That plumber is a saint! What a guy. I hope his business is blessed beyond measure. He could have taken advantage, but he didn’t. And yes, tofu; I’ve always found it bland but not in a recipe like yours! xx
