Sure, my heart would remind me of it’s existence when I ran really hard or watched a scary movie, but for the most part, I took it for granted when I was in my twenties. Back then, I would even pick my quads over my heart as my most valued muscle because they “actively” helped me run. Guess I was the definition of young and foolish, eh?
But, when I entered my thirties, my dad was diagnosed with congestive heart failure which made me sit up and take notice of this powerful muscle. While a healthy heart (which weighs less than a can of soda) can pump 2000 gallons of blood through 60,000 miles of blood vessels, my dad’s heart fell short of this. He was put on a regimen of pills, and thus began his long and hard battle with a disease that eventually took him from us.
It was during his battle that I began to stop taking my ticker for granted. I know we don’t have any guarantees in this life, but I simply wanted to be active and fit while my daughter was still young. While I already cooked and ate a vegetable-heavy diet, I began to include more heart healthy foods like salmon, walnuts, and chickpeas in my choices, and I also began taking supplements like Qunol Ultra CoQ10, which I pick up from my neighborhood Kroger store when I’m picking up my dinner ingredients for this Walnut Encrusted Spicy Salmon with Roasted Chickpeas and Brussels Sprouts.
CoQ10 supports heart and vascular health and its levels decline as we age, and that’s where Qunol Ultra CoQ10 comes into play. Qunol Ultra CoQ10 is 100% Water and Fat Soluble and offers 3 Times Better Absorption than regular* CoQ10 and is also the #1 Cardiologist Recommended form** of CoQ10.
*Regular CoQ10 refers to unsolubilized Ubiquinone in oil suspensions in softgels and/or powder filled capsules/tablets.
**Form refers to Water and Fat soluble CoQ10. Source: AlphaImpactRx ProVoice Survey 2016.
CoQ10 levels also decline from statin use and Qunol Ultra CoQ10 happens to be beneficial for statin drug users – you can find out more about Statin drug use and it’s side effects in this ebook.
Now, back to the Walnut Encrusted Spicy Salmon with Roasted Chickpeas and Brussels Sprouts you see here. This is really a very easy and quick dinner to throw together. And, because of the flavor from the variety of spices, you hardly need any salt at all.
I simply threw some turmeric, garam masala and paprika spiced, canned chickpeas in the oven to roast while I prepped the walnut, paprika and curry crust for the salmon. When the salmon was ready to go in the oven as well, I sauteed some sliced Brussels Sprouts with an onion, and some ginger and lime and in less than 40 minutes a heart healthy dinner was on the table!
There’s no better way to kick off the New Year than with a few heart-healthy habits and you can find out more about how Qunol Ultra CoQ10 can be apart of those habits. Also, make sure to follow Qunol Ultra CoQ10 on Facebook, Twitter and Instagram to get suggestions on heart healthy habits that will easily fit into your lifestyle!

Walnut Encrusted Spicy Salmon with Roasted Chickpeas and Brussels Sprouts
Print Pin RateIngredients
For The Roasted Chickpeas
- 2 cans chickpeas
- ½ teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon smoked paprika
- Salt and pepper to taste
For The Walnut Encrusted Spicy Salmon
- 1 cup walnuts
- 1 teaspoon smoked paprika
- 1 teaspoon curry powder
- 5 salmon fillets
- Salt and pepper to taste
For The Brussels Sprouts
- 3 cups washed and sliced Brussels Sprouts
- 2 teaspoons freshly grated ginger
- 1 onion chopped
- 2 teaspoons lime juice
- Olive oil
- Salt and pepper to taste
- Black sesame seeds to garnish optional
Instructions
For The Roasted Chickpeas
- Preheat the oven to 400 degrees
- Wash and rub the chickpeas between towels so the skins rub off (not necessary to do this, but it does make a difference in taste and crispness)
- Then toss the chickpeas with the turmeric, garam masala, smoked paprika and season with salt and pepper - if needed.
- Arrange on a baking sheet and pop into the oven for 35 minutes.
For The Walnut Encrusted Spicy Salmon
- While the chickpeas are roasting, place the walnuts in a plastic bag and give them a few blows with a heavy spoon or rolling pin (or you can use a food processor though I think the plastic bag option is more fun)
- Then toss the roughly crushed walnuts with the smoked paprika and curry powder and place on the salmon fillets
- Season with salt and pepper to taste (if desired) place on a foil lined baking tray and place in the oven (with the chickpeas) for 15-18 minutes
For The Brussels Sprouts
- While the salmon and chickpeas are in the oven, saute the onion in the olive oil over medium heat till onion is translucent. Then add in the grated ginger and Brussels Sprouts. Sprinkle the lime juice on top and saute for 10 minutes. If you like the Brussels Sprouts to be charred, then don’t stir the ingredients -making sure to flip them once halfway between the cooking time. Garnish with black sesame seeds, season with salt and pepper if needed and enjoy.
I am snacking some cumin roasted chickpeas right now :-)) Those nutty salmon steaks look so inviting!
You know, you’re right! The heart is a super important muscle, but folks usually forget it in favor of arms or legs or back or etc. Thanks for the heads up and info here, Shashi! I’ll have to take a look at that CoQ10. Also, I’m all about this meal. I love walnut (or pecan) crusted seafood, and this meal sounds like it’s right up my alley. And the roasted chickpeas and Brussels? Yes, please! I think when you move up here, I’ll have to invite you over to dinner…as long as you bring the dinner. ๐
This looks like a deliciously power packed and healthy dinner, Shashi!
What an interesting and healthy meal. I’m looking forward to trying this salmon recipe. I love the chick peas and brussels – made some of them last week!
I absolutely LOVE the sound of this! We are fortunate where we live to have some of the finest salmon in the world, so we tend to eat quite a bit of it!
Sorry to hear about your father. Taking care of our heart is so important, but most people don’t give it a second thought until there’s something “wrong”. I used to sell blood pressure medications for a large pharmaceutical firm and after reading the studies, the bottom line was that while pills can help, the best solution is a heart healthy diet and plenty of exercise. The salmon looks wonderful!
This sounds delicious. I never thought of using walnuts for crusting (pecans, almonds, pistachios, coriander, yes). I can’t wait to try this and see if I love the walnuts as much as I love the other nuts.
First off, this is just GORGEOUS! I will definitely be making this recipe in the near future. Second, the heart disease aspect of your post resonates with me, since most of my research in grad school related to cardiac physiology and disease. Thank you for that interesting perspective!
My Mom had 6 bypasses 3 years ago then she got an infection from the operating room. She was in the hospital forever and it was so scary so I get it! Omega-3’s and COQ10 are definitely what I recommend to my clients as a nutritionist. This recipe is incredible! Pinning to make soon.
I love all the flavors and textures you have going on with this salmon. It’s definitely a meal I would serve to my whole family! We could all use a little more CoQ10 in our lives!
I take CoQ10. Don’t know if it helps, but I take it! Anyway, lovely dish — SO GOOD LOOKING! Thanks.
Yummy! I will focus on making this today instead of what Trump is doing!! arrrrggggg!

Such a gorgeous and healthy meal Shashi. And I loved learning more about CoQ10. Thank you, I know it makes a huge difference. I also noticed that turmeric made its way into this recipe too. Yum! You da woman – hope you have a wonderful weekend friend, almost Fri-YAY! XOXO
I didn’t know that February is heart healthy month but now that I do I will certainly be celebrating it with lots of lovely salmon and definitely this.
What a fantastic idea for a crust, walnuts! I bet that tastes absolutely amazing.
I cannot wait to try out that crust Shashi. Thanks and have a great weekend!
I love nut crusted seafood and salmon is a favourite of mine….lots of healthy fats. I just try to be sure to buy wild. Love that you paired this with crispy chickpeas. Usually, I eat those as a snack, but why not with dinner? Certainly a lovely way to mix things up, right? And brussels sprouts are deeeeelicous. I like to call ’em ‘little cabbages’, lol. Thanks for the remainder about the importance of heart health! Cheers to a fabulous weekend, my friend, and to good health!
