Beet Berry Waffles
These gluten-free, cardamom and cinnamon-laced Beet Berry Waffles can be whipped up in the blender – and with a healthy dose of beets and berries, they are a perfect way to get your day started!

The dictionary defines “adore” as: “to love or admire very much,” “to like or desire very much,” “to worship or honor as a deity,” and/or “to regard with loving admiration and devotion” – and these all fittingly describe my feelings towards beets!

Yes, the humble, sometimes just plain gnarly, beetroot, holds a special place in my heart. And – as fate may have it, it just so happens to be good for my old ticker and other bits and pieces of me as well!
I understand that you might not entertain the same feelings towards beets as I do and for that I’m truly sorry.
But maybe if you happened to try these Beet Berry Waffles or moist and delicious Beet Chocolate Oatmeal Cake or Beet Soup, you might change your mind?!
Ingredients
- Vanilla protein powder
- Tapioca flour
- Eggs
- Non-dairy milk of your choice
- Salt
- Olive oil
- Beet puree (I roasted a couple of beets for 45 minutes at 375 degrees, then peeled them and pureed them in a blender)
- Cardamom
- Cinnamon
- Vanilla
- To garnish: melted chocolate non-dairy whipped topping, raspberries, blueberries
Instructions
- Place the protein powder, tapioca flour, eggs, non-dairy milk, salt, olive oil, beet puree, cardamom, cinnamon, and vanilla in a blender and pulse till well incorporated.
- Using a spatula, gently fold in the berries.
- Pour 4-5 tablespoons or enough to make one waffle onto a heated waffle iron and let cook
- When waffles are all done, serve with non-dairy whipped topping, melted good quality chocolate and raspberries and blueberries.

I’m a big fan (and consumer) of Shout…with 4 kids I got through A LOT of it…it’s the only brand I buy! And a big fan if these waffles! So excited to try baking more with protein powder and these are a perfect way to start!

I happened to be a beet fan, Shashi! Love them in many different forms, even raw. However, I’ve never incorporated them in desserts (horribly guilty). I’ve been planning to make savory beet pancakes though, but know I’m thinking about a sweet version. Love the incorporation of cardamom too!

This is absolutely beautiful, Shashi! I’m not beet-averse at all, in fact I think they work really well in sweet treats.

OMG-these waffles look divine! And, I love that pretty pink waffle batter too. As a mom of a boy who play LOTS of baseball, I have had LOTS of experience removing stains from baseball pants 🙂

Yesssss to being a messy cook! I’m actually kind of OCD about keeping my kitchen clean while I’m cooking, but the same definitely doesn’t apply to my person. Shashi! This is nothing short of pure geniusness. (I made up that word…but genius by itself just wasn’t enough.) I have a hard time believing you are such a messy cook! Laura is a messy cook, too, and I think we still have spaghetti sauce on our ceiling from gosh knows what…don’t ask. Laura also loves beets…so I’m thinking it’s something with you beet lovers. OH MY! If I didn’t know better I’d think Laura was my foodie/cooking doppelganger! You should have seen my kitchen this morning just from making jicama blueberry muffins – looked like a tornado struck it – at least the dogs helped clean up the jicama on the floor – am thinking if I invested in a small dog, it would help me clean the counters too?
Our waffle maker broke long ago and now all I know is I need a replacement pronto because I need your beet berry waffles in my life… Beets can be really messy and stain so badly that a little shout right away on those stains is a great idea.

My daughter sometimes takes beet puree and juice and stains her hands and uses it to make it look like a bad wound that she takes pictures of and sends to her friends and for the next 30 minutes all I hear is her hysterical laughter as she sees each incoming text – but now I don’t have to look at her tshirt and get hysterical anymore – thanks to shout! 🙂
