If you happen to be wondering why the title of this post is “Chocolate Cherry Muffin Tops & Muffin Top Mania,” well… today is the 11th anniversary of my little blog, Savory Spin. And, to commemorate this 11th anniversary (or blogiversary) I did a little thing. I wrote a little cookbook called Muffin Top Mania, and these Chocolate Cherry Muffin Tops are the first recipe in the book.
What is Muffin Top Mania exactly?
Muffin Top Mania is currently the first and only cookbook with 51 muffin-top recipes. And, it came about because I am not a huge fan of the soggy bottoms of muffins. I have been making, eating, and sharing muffin tops for the past few years.
There are a few muffin tops that have been featured on this blog, like these Apricot Chocolate Chip Ones, these Double Chocolate ones, these Pumpkin Muffin Tops with Streusel Topping, these Holiday Muffin Tops, and these Lemon Blueberry ones, to name a few.
Over the last couple of years, I started to notice boxed muffin top mixes appearing on the cake and spice aisles of grocery stores. And, last summer, packaged muffin tops started appearing in the bakery section of certain stores.
I brought home one of these packaged muffin tops and was disappointed at how soggy these muffin tops were. So, I figured I would put together a few of my favorite, ever-so-slightly-crisp-on-the-outside-and-soft-on-the-inside, muffin top recipes in a cookbook titled “Muffin Top Mania.” There was a whole episode on Seinfeld in which muffin tops were the star, so I humbly hope to rekindle a love for homemade muffin tops with this cookbook.
Muffin Top Mania has been a year in the making. Over the last year, I have made and remade several of the recipes in it. And, I am so grateful to my daughter, my boyfriend, my mom, my sister, and a few friends for taste-testing them all. I have taken them on road trips and flights. Some of these have even made it through TSA scanners and luggage cabins on planes and still tasted great. Most of these have even been delicious after having been frozen for 3–4 months!
If you have enjoyed the muffin top recipes I have shared on here and are eager to try out more, please grab yourself a copy of Muffin Top Mania.
Now on to these Chocolate Cherry Muffin Tops (or MTs). These MTs are so tasty. The first time I made these, we took them with us on a flight from Atlanta to New York. When we got to our hotel, we were famished, and before we headed out to dinner, my boyfriend and I feasted on these. They were the perfect evening pick-us-up.
What are the ingredients needed to make these Chocolate Cherry MTs?
You will need the following 10 ingredients to make these tasty Chocolate Cherry MTs:
- All-purpose flour
- Sugar
- Salt
- Baking powder
- Egg
- Olive oil
- Almond milk
- Pure vanilla extract
- Fresh cherries
- Chocolate chips
I have made this recipe a few times. Sometimes I have added in some cinnamon, and sometimes I have left the cinnamon out. It all depends on if you want the chocolate and cherry flavor to shine, or you would like them to be more muted and have the cinnamon flavor permeate through the MT.
How do you make these Chocolate Cherry Muffin Tops?
Once you have all the ingredients gathered, mix the dry ingredients like the AP flour, sugar, salt, and baking powder together, with a spoon.
Then, add in the wet ingredients such as the almond milk, olive oil, vanilla extract, and egg, and mix well.
Add the chocolate chips, cut the cherries in half, and add them to the MT mix too.
Mix well and then divide spoonfuls of the mixture between 4 muffin tops, onto a baking tray.
Bake for 18–20 minutes at 375 degrees Fahrenheit. Let these cool for about 10–20 minutes and enjoy!
Notes:
My MTs (muffin tops) recipes are so simple to make, and you do not need any elaborate kitchen appliances or utensils to make them. You do not need an electric mixer or a muffin pan.
You just need a bowl, a spoon, a baking tray, and a silpat or parchment paper.
While this chocolate cherry muffin top recipe is made with flour, I have other MT recipes in the Muffin Top Mania cookbook that are made with almond flour, in addition to the all-purpose flour, for taste, texture, and a little protein boost.
I also have refined sugar-free muffin top recipes, as well as a few savory recipes in the cookbook. If you are so inclined, please do check out my muffin top recipe cookbook, “Muffin Top Mania.” If you are still reading along, thanks so much for your support!
