I don’t talk about this often on this blog of mine, but, during my late teen years, I battled anorexia nervosa. Those were years I’m not proud of. Those were years that were consumed with deceiving my parents as to what I ate – while I plotted how to eliminate 4 food groups out of my diet and exist on fruit alone. As my weight dropped, so did my grades and energy levels.
I am in my forties now, and with time and help, I did make a slow, hard recovery.

These days, I feel best when I manage to incorporate a variety of vegetables and legumes, fruits, nuts, and lean meats into my diet. These days, I can truly enjoy a plate of pasta – occasionally.

Now back to this Creamy Curry Pasta…
My daughter and I love curry, so, instead of a rich sauce, I figured I would put a spicy, curry-spin on pasta and make a fusion curry with veggies, chickpeas, coconut milk, spices and Modern Table® Elbows.
This recipe is super easy to pull together and incredibly gentle on your wallet as well. Aromatically flavored with curry powder, coriander, smoked paprika, onions, ginger and garlic, this Creamy Curry Pasta would be a quick, delicious, easy and nutritious addition to your dinner plans.

Ingredients
- 2 tbsp oil
- 1 onion
- 3 cloves garlic
- 2 tsp freshly grated ginger
- 1 carrot
- 1 bell pepper
- 1 cup edamame or green peas
- 3 stalks celery
- 1 can chickpeas
- 1 tsp coriander
- ¾ tsp curry powder
- ½ tsp turmeric
- 1 tsp smoked paprika
- 1 cup Modern Table® Elbows
- 1 1/4 cups coconut milk full fat
- Salt and pepper to taste parsley to garnish
Instructions
- Prepare Modern Table® Elbows according to package directions – then drain and set aside.
- Peel and chop onions and garlic. Peel and grate ginger. Set garlic and ginger aside.
- Add oil to a pan over medium heat and add in onions. Saute onions for about 10 minutes.
- While onions are sauteing, chop carrot, bell pepper and celery stalks.Add in garlic, ginger, carrot to onion mixture and saute 2 minutes.
- Then add in the celery, bell pepper, chickpeas, edamame or peas, coriander, curry powder, turmeric, smoked paprika amd coconut milk and stir. Let cook about 2 more minutes.
- Stir in the Modern Table® Elbows and turn the stove off and let sit for about 5 more minutes.
- Season with salt and pepper and garnish with parsley and enjoy.
This looks like an absolutely delicious curry Shashi. I don’t think I’ve made a curry with pasta before so this one is on the list. Lots of delicious healthy veg in there too. I love it!
