You will also need some salt and pepper to season this with. Totally optional would be some parsley or cilantro to drizzle on top of the roast carrots, before serving these.
Variations
This is a versatile recipe that ca be altered to suit your tastes and preferences.
Extra Virgin Olive Oil: The EVOO can be replaced with vegetable oil or any other oil you may have on hand. Or, you could use butter or brown butter for a flavor spin, though this option will make this a vegetarian recipe and not a vegan one.
Spices: smoked paprika, harissa, and onion powder can be replaced with red pepper flakes and garlic powder. Or fresh roasted garlic can be mixed into the oil and then brushed onto the carrots. You could also use a combination of 1 teaspoon of coriander, 1/2 teaspoon turmeric, 1/2 teaspoon cayenne, and 1/2 teaspoon cumin. Or, you could leave out the spices and go with a blend of your favorite dry or fresh herbs such as fresh thyme, oregano, basil, and parsley.
Carrots: I used packaged whole carrots for this, instead of sliced carrots. I tried to pick carrots that were close to the same size as if the carrots differ in size greatly, then the cook time for some will be different for the other. Which means that at the mentioned baking time, some of the carrots will be tender and the others will not be as tender.

How to make easy oven roasted carrots?
- Once all the ingredients are gathered, preheat the oven to 425 degrees Fahrenheit. This temperature is ideal to roasting carrots so they are fork tender in less than 30 minutes.
- While the oven is preheating, rinse the carrots to remove any debris.
- You can peel the skin off the carrots if you prefer, but you do not need to do so. I like to keep the prep time to around 5 minutes so I left the skin on. Then place the carrots in a single layer and spread out on a baking sheet or an oven safe pan.
- Mix together the olive oil, harissa, smoked paprika, and onion powder in a small bowl. Use a pastry brush or, simply spoon on this spiced oil mixture onto the carrots. Toss the carrots around so they are fully covered with the spiced oil mixture.
- Place the baking sheet or oven safe pan with the carrots in the preheated oven and let the carrots bake, undisturbed for 20-25 minutes or until they are tender.
- Remove the carrots from the oven and season with seas salt and black pepper to taste. I like to sprinkle these carrots with some chopped fresh parsley before serving.

Tips to get tender oven roasted carrots in 30 minutes:
Use carrots that are similar in size and not extra wide.
Place the carrots in an oven that has been preheated to 425 degrees F. Do not place your carrots in the oven as it preheats, instead make sure your oven temperature displays 425 degrees.
Oil the carrots generously. Make sure that the carrots are covered with a coating of oil.
Want to cut down the baking time?
If you use sliced carrots in this recipe, then the baking time can be reduced to 15 minutes at 425 degrees F. However, slicing whole carrots would increase the prep time of this recipe by 5 more minutes, unless you purchase already sliced carrots.
Storage
These easy oven roasted carrots are best when they are freshly made. However, if you have leftovers, these roast carrots can be stored in an airtight container in the refrigerator for 2-3 days.
Reheating
When you want to reheat these, they can be placed in a microwave dish and microwaved at intervals of 30 seconds, until they are the desired warmness. Or, they can be placed in a pan on a stove top and heated over a medium flame, for about 3-5 minutes or until warmed through.
