Well, my daughter and I happened upon Strong Roots Cauliflower Hash Browns and Mixed Root Veggie Fries quite by accident. We were rushing through the frozen veggie aisle at our local grocery store when we saw these simple white packages. Neither of us had seen or had them before, so we figured we would give them a try.

I had been searching for a tasty plant based hash brown for so long. Not necessarily for me, but my daughter. I figured, instead of buying two types of hash browns, we could find one plant based one we both enjoyed. And, my search is finally over! I’ve finally found a winner. One that is plant based and oh so tasty!
And that winner is Strong Roots Cauliflower Hash Browns! Simply put, they are delicious! They actually don’t even need to be loaded up with a bunch of beans and veggies like I’ve done in this post!

But, I love them so much I was trying to justify eating them for dinner as well and a skillet of veggies and beans sounded like dinner done right – at least to me!
How to assemble this loaded cauliflower hash browns skillet?

These loaded cauliflower hash browns took less time to assemble than it took for us to eat this. All you have to do is:
- Bake 5-6 Strong Roots Cauliflower Hash Browns by placing them in an oven, that has been preheated to 400ºF, for 15–17 minutes, making sure to flip them once while cooking,
- When baked, layer them with chopped purple cabbage,
- Then throw on some thawed out, frozen corn,
- Layer on some canned sliced mushrooms – or fresh ones,
- Layer on some chopped avocado and black beans
- And, finally some salsa, chili flakes, and parsley
And dig in!
By the way, each serving of Strong Roots Cauliflower Hash Browns has 0g trans fat and only 160 calories (without all the toppings I’ve included here). Each 13.3-ounce bag contains two servings of frozen Strong Roots Cauliflower Hash Browns and each 15-ounce bag contains five servings of frozen Strong Roots Mixed Root Vegetable Fries.

We have had the chance to try out both Strong Roots Cauliflower Hash Browns and Mixed Root Veggie Fries and found both to be so tasty.

Ingredients
- 5-6 Strong Roots Cauliflower Hash Browns
- 1/2 cup chopped red cabbage
- 1/2 cup frozen corn thawed
- 1/4 cup canned sliced mushrooms
- 1/2 cup canned black beans – drained and rinsed
- 1/2 an avocado
- 2-3 tbsp. salsa
- To garnish – chili flakes parsley
Instructions
- Bake 5-6 Strong Roots Cauliflower Hash Browns. (For the Hash Browns, heat your oven to 400ºF and bake in a single layer for 15–17 minutes, flipping once while cooking. For Mixed Veggie Fries, bake in a single layer for 20–25 minutes, turning once while cooking).
- When baked, layer them with chopped purple cabbage,
- Then throw on some thawed out, frozen corn,
- Layer on some canned sliced mushrooms – or fresh ones,
- Layer on some chopped avocado and black beans
- And, finally some salsa, chili flakes, and parsley

This would bloat me like hell, but I still want some LOL
What a fun concept! I haven’t seen these cauliflower hash browns before, but I’ll keep an eye out for them on my next Walmart trip. I’m all about loaded totchos, and the cauliflower version means they’ll be healthier. Well done, Shashi!
