Mini Andouille & Pepper Jack Beet Pizzas
Mini Andouille and Pepper Jack Pizzas on a cheesy, gluten-free, beet crust!

Once upon a time, I made a beet crust pizza that (not to toot my own horn) garnered rave reviews. I even had a few private chefs email me that they had tried out that recipe for clients who were gluten-free, and the clients seemed to have loved it!
So, I figured I would take that gluten-free beetroot pizza crust and make it into a base for these mini beet pizzas.
While I topped each mini pizza with sausage, tomato, and cheese, you can use whatever your favorite toppings are.
These mini beet crust pizzas are always a hit. They are tasty, gluten-free, and a fun and easy dinner or lunch recipe.

Sometimes my daughter’s study habits boggle my mind – heck, that’s a lie!
What I should have really said is that ALL the time my daughter’s study habits boggle my mind! She needs to have her iPod spewing tunes, and a show on the telly, for her to be able to study or do her homework! How she brings home mostly A’s, I will never quite comprehend.
I think that hand-me-down Parent Handbook I got, forgot to mention that sometimes our children tend to be different from us! The Nerve! For as far back as I can remember, my brain has needed total silence to churn! Sometimes, I even drive in total silence!
Recently, I figured I would do the whole “mile in my daughter’s shoes” thing; and started this post, with an old episode of Glee on the telly and Don’t Dream It’s Over by Crowded House on my iPod.
I managed to write down the disclosure to this post before being totally distracted by what was on Glee.
And, I haven’t quite been able to kick that tune that was on Glee out of my head!

Maybe if I hadn’t downloaded it on my iPod, I wouldn’t stop mid-conversation and say, “let’s have a kiki” – with matching hand gestures! I guess it’s only fair I share and infect or re-infect your brains with this song too!
Maybe if we met for a kiki, I would share some of these mini pizza appetizers with y’all! They just happen to be gluten free and beet-full – I guess that gorgeous red coloring gave that last part away?
While my daughter and I have different study/work habits; these days, we both adore beets.
I make little gluten free beet discs and we usually sandwich two together with Cheddar or Gouda and/or some sort of meat and/or caramelized onions and/or spinach.
Yes – these are totally versatile and totally fun to eat.
If you happen to not be a beet lover (the nerve!) – these don’t have a strong beet taste to them – so go right ahead and dig in!

I used to try to keep these discs gluten and dairy free, but when the chance to experiment with Cabot cheese crossed my path through a contest sponsored by Cabot Cheese and The Recipe Redux, my daughter suggested adding cheese to the beet disc mixture and that’s what led to these mini beet pizzas.
That added cheese took these discs to a whole other taste-level! I topped these with sliced tomatoes, sliced pepper jack and sliced and cooked Andouille Sausage – for a quick evening/after work/school snack.
But, feel free to chose any toppings you fancy – when you make these for your kiki! That color alone will spark conversation that might last into the wee morning hours!

Ingredients
For The Beet Crust/Disc:
- 1/2 cup roasted and puréed beets I roast mine at 400 for 45 minutes and then purée them in a blender when cool
- 1 egg
- 1/2 cup Cabot White Oak Cheddar shredded
- 1/2 cup brown rice flour
- 1/2 teaspoon baking powder
- 1 tablespoon olive oil
- pinch of salt
Toppings:
- 1 tomato sliced
- 1/2 a package Cabot Pepper Jack Cheese Sliced
- 1 Andouille Sausage sliced and cooked
- Parsley
Instructions
For The Beet Crust/Disc:
- Preheat oven to 375
- Mix together the brown rice flour and baking powder and salt
- Add the egg, pureed beets, and olive oil and combine
- Add the Cabot White Oak Cheddar
- Spoon 2 tablespoons of dough (dough will be wet) on a parchment-lined baking tray and shape into a circle – repeat to form 6 circles
- Bake for 18-20 minutes
Assembly:
- On each beet disc, place one slice of tomato
- Slices of Pepper Jack
- pieces of Andouille Sausage
- Sprinkle with parsley
- Bake at 375 for another 8-10 minutes -till cheese is melted
- Finally – Dig In!

What a great looking pizza. I’ve never heard of that cheese though. I’m impressed your daughter is able to bring home such great exam results given how she studies! She is more talented than me – I have to have total peace and quiet and can’t even cope if the gardener from next door is using his leaf blower xx

I’m like you and need complete silence to get any work done. I’ve taught myself to work with headphones in now as music is better than the endless chatter going on at work!
Arrg – You probably wanna beet me over the head right now … no more beet recipes – for the rest of this week at least 😉
First off, I need total silence when I’m working. I’ll turn on some 80’s rock when I’m in the kitchen cooking/baking, but when I’m at the computer working I need silence. Sometimes I can turn on something with no words…like jazz. (Laura calls that elevator music, but she’s wrong.) Usually I prefer it to be nice and quiet.
Now, more importantly is the fact that Cabot Cheese rocks my socks off!! I swear I could eat bars of that cheese for lunch. No need to cut it…that just takes time. You always come up with the most creative recipes, too…I’m guessing this flavor combo tasted amazing!!
My daughter has finally started liking 80’s rock and I am elated! I mean – is there anything better! Definitely NOT “elevator music”! 😉
BTW, I only cut slices for this recipe – I was thinking my daughter and I were the only two breaking off hunks of Cabot blocks – yes, I said hunks not chunks – chunks are itsy bitsy – and we have no time for itsy bitsy! Or washing dirty knives everytime someone sneaks some cheese!

Maybe t’s a new generation thing but I’m with you about working in silence- as much as I love music/background noise, it has to be off while I’m working otherwise I get far too distracted. But hey, if your daughter is still bring home A’s, you better help make sure her iPod is constantly topped up with new music ;)! This looks like the perfect snack- cheese makes everything better :)!
