  2. SHASHI!!! I am so ready for a Coke and a smile! Having toured the Coca Cola museum in Atlanta several times, I think I’ve tried nearly all the Cokes in the world and what an awesome pairing with these veggie quesadillas. Quick, easy and classic. My boys are all soccer guys with the exception of Hudson, who is actually starting equine therapy this summer. Pretty cool, huh? Can’t believe your daughter is finished with her freshman year. How can it be??? Good for her, enjoy your time together this summer. XOXO

  3. Great looking quesadillas, mine never looked so good. I will be “forced” to watch the World Cup. My husband is not a great football person, but when it comes to the World Cup or the European Cup, he won’t miss any of the games playing during a time when he’s not at work. So, I will say goodbye to Netflix for a few weeks… 🙂

  4. I am SO excited about the World Cup, Shashi! I’m a sports guy, and this time of the year is just so boring when it comes to sports. Baseball just doesn’t do it for me. So every 4 years I get a treat in the form of soccer! Although, to be fair, I’m not as excited about this year as most of my teams didn’t make. No US. No Italy. No Netherlands. I’m pulling for Belgium all the way! But no matter who’s on tv, I know this quesadillas and a nice cold Diet Coke will be a great meal for watching the games. Thanks for sharing…I’m making these ‘dillas (and soon)! 🙂
