4-ingredient Fresh Strawberry Popsicles with Ruby Chocolate Coating

These 4-ingredient strawberry popsicles are a treat for your tastebuds. Along with these matcha popsicles, these are one of my favorite desserts.
Here’s what makes these strawberry popicles so good, for me:
- They are so seriously scrumptious.
- These fresh strawberry popsicles are so simple to make.
- They are dairy-free
- They are made with only four main ingredients. If you decide to use the ruby chocolate coating, then the ingredient list goes up to 5.
What is Ruby Chocolate?
A while back, I had watched an episode of Sugar Rush in which ruby chocolate was an ingredient, and I have been on the hunt for it ever since. So, when I came across ruby chocolate at Sprouts, I had to bring home a bag.
Supposedly, ruby chocolate has a bit of mystery that surrounds it. Apparently, there is only one company that has been processing it since 2017, and they say that ruby chocolate gets its hue from Ruby Cocoa Beans. This article goes into more detail on the process. Ruby chocolate, also referred to as the world’s 4th chocolate, is very similar to white chocolate in its creaminess.
What does Ruby chocolate taste like?
While ruby chocolate is similar to white chocolate, it tastes very different from white chocolate. Ruby chocolate tends to have a unique flavor. It is not as sweet as white chocolate. This creamy concoction has a hint of tart berries and tangy yogurt.
Because of its flavor profile, I figured it would complement these strawberry coconut condensed milk popsicles. I figured I would melt a bit of it and dip the strawberry popsicles into it – and I gotta say, that combination was so delicious.
Ingredients and Substitutions
You will need the first four ingredients for the popsicles and ruby chocolate for the coating:
- Fresh strawberries
Fresh strawberries are the best option for these popsicles. However, fresh strawberries could be substituted with frozen strawberries, too. - Coconut condensed milk
This is my favorite brand of dairy-free condensed milk. If you do not have issues with dairy, then the coconut condensed milk can be replaced with sweetened condensed milk. - Full-fat coconut milk
Full-fat coconut milk is a must for this recipe. Light coconut milk will result in popsicles that are less creamy. - Cardamom
I feel that cardamom complements the strawberries and coconut milk. However, if you prefer, you could use a tsp or two of vanilla extract. - Ruby chocolate chips
I found ruby chocolate on Amazon recently, but like the price of all the other types of chocolate, the price of it is on the rise. Ruby chocolate can be replaced with melted white chocolate or omitted completely.
Recipe Tip
Ruby chocolate melts quicker than milk chocolate, so after the first 30 seconds, you might want to microwave it at 10-second intervals until it’s melted.
Instructions
I cannot stress how easy these popsicles are to make.
- First, rinse the strawberries, cut off the leaves, and dry them with a kitchen towel. Then, roughly slice them and drop them into a blender.
- Add the coconut condensed milk, cardamom, and the coconut milk to the blender and blend well.
- Pour the mixture into a popsicle mold and place in the freezer.
- If you have Popsicle molds that do not have a Popsicle stick, then remove these from the freezer at the 30-minute mark. Add the popsicle sticks into the strawberry popsicles and freeze them for 3-4 hours.
- If dipping into ruby chocolate, melt the ruby chocolate before removing the popsicles from the popsicle molds. Melt the ruby chocolate by placing it in a microwave-safe bowl and microwaving it on high for 30 seconds. Stir and repeat as necessary. Ruby chocolate melts quicker than milk chocolate, so after the first 30 seconds, you might want to microwave it at 10-second intervals until it’s melted.
- Remove popsicles from the popsicle molds by placing the popsicle molds in a container with some warm (not hot) water for 10 seconds or so, or until the popsicles slide out when you pull firmly on the popsicle stick.
- Dip the strawberry popsicles into the melted ruby chocolate, let sit for a minute or two, and enjoy.
Storage
You can store extra Popsicles by placing them in sealed plastic bags and placing them in the freezer.

These popsicles look amazing, Shashi! Truthfully, I picked up a box of Whole Fruit strawberry popsicles the other day as I love biting into a popsicle and finding chunks of fruit. Now I can just make my own instead! And that ruby chocolate is a fun touch, too!
