Easy Vanilla Crepes

These last couple of years, after the first weekend in September, we become a house divided! I am not sure if it’s the changing weather, or all the football talk, or the anticipation leading up to turning our clocks back an hour – but September has my daughter and I having trouble seeing eye to eye. You see, she loves crepes and I adore pancakes!
It always boggles my mind how a tad bit of melted butter can change how my daughter regards a mix of flour, eggs, milk, sweetener, and salt. Even when she was a wee little one and could barely reach the counter-top, she would sneak crepes off the plate as I made them – a behavior she still proudly carries on now (hence the lonesome 2 crepes in these photographs). Speaking of what goes into crepes, I was surprised to learn that in the middle ages, crepes were made with a mix of wine and water instead of milk!
On those weekend mornings when we plan on getting out of the house early to go hiking, I know that the only thing that will have my daughter not acting like a bear mid-hibernation is the smell and sound of crepes cooking! And, me being me, I have to make sure that the crepes I feed her have something good in them.
So, I made these with Premier Protein’s vanilla shake and even sneaked some protein shake into the filling! I also used coconut oil instead of butter and she didn’t even know these were good for her!

Ingredients
- CREPES
- 1 cup gluten free flour of your choice
- 2 eggs
- 1 cup Premier Protein Vanilla Shake
- 1/3 cup water
- pinch of salt
- 1 teaspoon vanilla essence
- 2 tablespoons coconut oil melted
- APPLE PUMPKIN FILLING
- 1 tablespoon coconut oil
- 1 apple chopped up
- 3 tablespoons coconut sugar or brown sugar
- 1/4 teaspoon salt
- 3 tablespoons 100% pumpkin puree
- 1 teaspoon vanilla
- 1/4 teaspoon pumpkin pie spice
- 4 tablespoons of Premier Protein Vanilla Shake
Instructions
- CREPES
- In a large bowl, mix the flour, eggs, Premier Protein Vanilla, Shake, water, and salt with a whisk and a whole lot of elbow grease! Mix till batter is creamy and lump-free
- Then whisk in the melted coconut oil
- Place a pan over medium heat and grease it with coconut oil
- Add a ladlefull of batter to pan and twirl pan around so batter coats bottom of pan in a thin layer
- Flip and let cook about 30 seconds and transfer to a plate
- Repeat with the rest of the butter
- APPLE PUMPKIN FILLING
- Add coconut oil to the same pan and add in the apple, coconut sugar, salt, pumpkin puree, vanilla and pumpkin pie spice and let cook till apple softens - stirring often
- Add the Premier protein shake and stir till excess liquid is evaporated
- Place a couple of tablespoons of batter in each crepe and roll and enjoy
- Can be enjoyed with plain syrup or pumpkin syrup
These look like serious protein perfection right there. I have never mastered the art of making crepes, but this certainly makes me want to try!
